Before you start
Before starting, pat the chicken thighs dry with paper towels and trim any excess fat if needed. Slice the red bell peppers into strips about 1/2-inch wide. Grate the ginger on a microplane or the fine side of a box grater.
Mince the garlic. Measure out the peanut butter, tomato sauce, broth, cumin, salt, and pepper. Have the slow cooker ready and plugged in. No need to preheat the slow cooker — it will come to temperature as it cooks.
Ingredients at a glance (10)
- 2 lb boneless skinless chicken thighs
- 2 red bell peppers, sliced into strips
- 2 tsp ground cumin
- 1 tbsp fresh ginger, grated
- 1 cup creamy peanut butter
- 1 can (15 oz) tomato sauce
- 1/2 cup low-sodium chicken broth
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
Layer and Sauce
- Layer the Chicken and PeppersPlace the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. Scatter the red bell pepper strips evenly over the chicken. Sprinkle the ground cumin and grated ginger over the top.Look for The chicken thighs should cover the bottom of the slow cooker, with pepper strips scattered evenly.Tip If the thighs overlap slightly, that is fine — they will shrink as they cook.
- Make the Peanut-Tomato SauceIn a medium bowl, whisk together the creamy peanut butter, tomato sauce, chicken broth, minced garlic, kosher salt, and black pepper until smooth and fully combined. The sauce should be thick but pourable.Look for The sauce is a uniform, rich brown-orange color with no streaks of peanut butter.Tip If the sauce seems too thick, add an extra 2 to 3 tablespoons of broth.
At the end of this phase, the slow cooker insert holds a neat layer of chicken thighs topped with bright red pepper strips. The cumin and ginger are sprinkled evenly over the top, and the peanut-tomato sauce is poured over, creating a glossy, deep-orange blanket.
The sauce is thick but pourable, and the aroma of peanut and tomato is already inviting. The chicken is still raw, so no temperature check is needed yet.
Slow Cook
- Pour the Sauce Over the ChickenPour the peanut-tomato sauce evenly over the chicken and peppers. Use a spatula to spread the sauce so it covers most of the chicken. Do not stir — let the sauce settle around the chicken.Look for The chicken is mostly submerged in the sauce, with a few edges peeking through.Tip Stirring now can break up the chicken; let the slow cooker do the work.
- Cook on LowCover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The sauce will thicken and the flavors will meld.Look for The sauce is bubbling gently around the edges and the chicken is easily pierced with a fork.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Cooking on low keeps the chicken moist and prevents the sauce from separating.
After 4 to 5 hours on low, the kitchen smells richly of roasted peanuts and warm spices. The sauce has darkened and thickened, and small bubbles break the surface around the edges. The chicken is visibly tender — a fork slides in with little resistance. The peppers have softened and melded into the sauce. The internal temperature of the chicken should read 165°F (74°C) before moving on.
Rest and Serve
- Rest and ServeTurn off the slow cooker and let the chicken rest in the sauce for 5 minutes. Serve the chicken and peppers with the sauce spooned over the top. The sauce will continue to thicken as it cools.Look for The chicken is glossy and coated with a thick, creamy sauce.Tip For a thicker sauce, remove the chicken and simmer the sauce on the stovetop for 5 minutes.
The slow cooker is off, and the chicken rests in the glossy sauce. The sauce clings to the meat and peppers, and the surface is smooth and creamy. The chicken is so tender that it can be gently lifted with a spatula. The sauce is thick enough to coat a spoon. Serve immediately, spooning extra sauce over each portion.
Common mistakes
One common mistake is using chicken breasts instead of thighs — breasts dry out in the slow cooker. Another is stirring the sauce after pouring it, which can break up the chicken and make the sauce gritty.
Avoid opening the slow cooker lid repeatedly, as it releases heat and extends cooking time. Also, be careful not to overcook — even though thighs are forgiving, cooking beyond 6 hours on low can make them mushy.
How to tell it’s done
The chicken is done when it reaches an internal temperature of 165°F (74°C) and is fork-tender. To check, insert an instant-read thermometer into the thickest part of a thigh — it should read 165°F (74°C).
The chicken should be easily pierced with a fork and the meat should have a slight pull but not resist. The sauce should be thick enough to coat the back of a spoon, and the peppers should be soft but not mushy.
- Poultry: 165°F (74°C) in the thickest part
