Tips for success
For the best texture, use chicken thighs rather than breasts. Thighs stay moist and tender even after long cooking, while breasts can become dry and stringy.
If you only have bone-in thighs, remove the skin before cooking and increase the cook time by 30–45 minutes. After shredding, let the chicken sit in the sauce for 5–10 minutes so it soaks up even more flavor.
To make the sauce extra thick and glossy, after shredding the chicken, remove it from the slow cooker and set aside. Whisk 1 tablespoon cornstarch with 2 tablespoons cold water, stir into the sauce, and cook on high for 10–15 minutes until thickened.
Then return the chicken to the pot and toss to coat. This step is optional but gives a restaurant-quality finish. For a smoky twist, add a teaspoon of liquid smoke along with the BBQ sauce.
Variations
- Spicy Chipotle BBQ: Add 2 minced chipotle peppers in adobo sauce along with the BBQ sauce for a smoky heat. Reduce the BBQ sauce to 1 1/4 cups to balance the extra moisture. For extra spice, add a pinch of cayenne pepper.
- Honey Garlic BBQ: Stir in 3 tablespoons honey and 2 extra cloves of garlic with the BBQ sauce. The honey adds a floral sweetness that pairs beautifully with the hickory smoke. Use a mild BBQ sauce so the honey flavor shines through.
- Pineapple BBQ Chicken: Add 1 cup crushed pineapple (drained) along with the BBQ sauce. The pineapple adds tropical sweetness and helps tenderize the chicken. Serve over rice with a sprinkle of toasted coconut for extra flair.
- Smoky Bourbon BBQ: Replace 1/4 cup of the BBQ sauce with bourbon. The alcohol cooks off, leaving a rich, smoky depth. Add 1 teaspoon of smoked paprika to enhance the smokiness. This version is perfect for a weekend dinner.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooled chicken in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of water or BBQ sauce if the mixture seems dry.
Store leftover BBQ chicken in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or extra BBQ sauce if needed to loosen. The flavors continue to meld, making leftovers even more delicious. Serve over fresh rice or in sandwiches.
This dish can be assembled the night before. Layer the chicken, onions, garlic, and BBQ sauce in the slow cooker insert, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 30 minutes to the cook time because the ingredients start cold. This make-ahead option is perfect for busy mornings when you want dinner ready by evening.
Serving ideas
Serve the BBQ chicken over steamed jasmine rice for a complete meal. The rice soaks up the rich sauce and balances the sweetness of the onions. For a low-carb option, serve over cauliflower rice or alongside a crisp green salad.
You can also pile the chicken onto soft buns for a pulled-chicken sandwich, or serve it with cornbread and coleslaw for a Southern-inspired plate.
For a heartier meal, add a side of roasted vegetables or a simple slaw. The dish is quite saucy, so have extra napkins on hand if serving as a sandwich. Garnish with chopped scallions or fresh parsley for a pop of color, though the recipe is delicious as-is. This is a versatile dish that adapts to whatever you have on hand—make it your own.
