Before you start

Before starting, ensure all vegetables are chopped into uniform pieces to ensure consistent cooking. Shredded hash browns can be used directly from the package, but if they are frozen, ensure they are thawed and patted dry to prevent excess moisture.

Have your whisk and measuring cups ready to combine the eggs and milk efficiently. Prepare the slow cooker insert by lightly coating it with oil or butter so the casserole does not stick to the sides.

Ingredients at a glance (7)
  • 4 cups shredded hash browns
  • 2 cups fresh spinach
  • 1 cup chopped peppers
  • 1 cup sliced mushrooms
  • 1 1/2 cups shredded cheddar cheese
  • 8 large eggs, whisked
  • 1/2 cup whole milk

Instructions

Layering the ingredients

  1. Layer the base and vegetables
Grease the interior of the slow cooker with a thin layer of butter or non-stick cooking spray to ensure easy serving. Evenly spread the shredded hash browns across the bottom of the slow cooker insert. Add the fresh spinach, chopped peppers, and sliced mushrooms in even layers over the hash browns.
Look for The hash browns should form a uniform base across the bottom of the slow cooker.
Tip Distribute the vegetables evenly to ensure each serving has a variety of ingredients.

At this stage, the slow cooker should be neatly layered with hash browns on the bottom, followed by the vibrant mixture of spinach, peppers, and mushrooms. The layers should be compact but not overly pressed down.

This setup creates the foundation for the casserole and ensures that every bite contains a balanced mix of vegetables and potatoes. Ensure the edges of the slow cooker are clean before proceeding.

Adding the egg base

  1. Add cheese and egg mixture
Sprinkle the shredded cheddar cheese over the top of the vegetable layer. In a separate bowl or glass measuring cup, whisk together the eggs and milk until fully combined. Pour the egg mixture slowly over the layers in the slow cooker, ensuring it reaches the edges so everything is moistened.
Look for The egg mixture will settle into the crevices of the vegetables and hash browns.
Tip Whisk the eggs thoroughly to avoid streaks of whites in the finished casserole.

Once the cheese is sprinkled and the egg mixture is poured, the contents should look well-integrated. The milk and egg mixture should seep down through the vegetable and potato layers, filling the gaps. The cheese will sit partially on top and partially within the egg mixture. Everything should look ready for the heat, with no large pockets of dry ingredients visible on the surface.

Final cook and rest

  1. Cook and serve
Cover the slow cooker with the lid and cook on low for 4 hours. To ensure the eggs are fully cooked through, they must reach an internal temperature of 160°F (71°C). Let the casserole rest for 5 minutes before scooping into bowls to serve warm.
Look for The edges should be firm and the center should no longer be liquid.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Avoid lifting the lid during the cooking process to maintain a consistent temperature.

The casserole should be steaming and fragrant when the lid is removed. The cheese will be melted and bubbly, and the eggs will be fully set. A quick test with a knife in the center should show no runny egg. Letting it rest for five minutes allows the structure to firm up, making it much easier to scoop into portions without the casserole collapsing on the plate.

Common mistakes

A common mistake is adding too much liquid, which can lead to a soggy texture; stick to the recommended amount of milk to maintain the right consistency. Another error is failing to grease the slow cooker, which makes serving difficult and complicates cleanup.

Avoid opening the lid frequently during the cooking process, as each time you open it, heat escapes and the cooking time increases significantly, which may lead to uneven results across the casserole layers.

How to tell it’s done

The casserole is perfectly cooked when the edges are set and lightly browned, and the center is firm to the touch. Using a food thermometer, check that the center reaches an internal temperature of 160°F (71°C).

The eggs will appear set and slightly puffed. If the center still wobbles significantly or looks liquid, continue cooking for an additional 15 to 20 minutes before checking again, as slow cookers vary in heating intensity.
