Before you start

Before you begin, ensure you have a clean, dry workspace. Prepare your ingredients by measuring out the broth and chopping the sun-dried tomatoes if they are not pre-chopped. Have your slow cooker placed on a flat, heat-resistant surface near an outlet.

Check that your beef roast is completely thawed if it was previously frozen, as cooking from frozen can lead to uneven temperatures and food safety concerns. Having all components ready and within reach will make the assembly process seamless and efficient, allowing you to get the meal started in just a few minutes.

Ingredients at a glance (4)
  • 3 lb beef chuck roast
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 packet seasoning packet
  • 2 cups beef broth

Instructions

Assembly of ingredients

  1. Prepare the slow cooker
Place the beef chuck roast into the bottom of the slow cooker insert. Ensure the meat is positioned flat to encourage even cooking throughout the process.
Look for Beef is settled at the bottom.
Tip Pat the roast dry with paper towels before adding to the cooker to remove excess surface moisture.

At this stage, the beef is nestled securely in the bottom of the slow cooker with the tomatoes and seasonings distributed over the top. The broth should be poured in carefully to ensure it covers the base of the meat. Everything should look organized and ready to begin the long, slow heat application. There is no need to stir the ingredients at this point, as the flavors will meld naturally as the liquid heats up and the beef begins to release its own juices.

The slow cooking process

  1. Add aromatics and liquid
Scatter the chopped sun-dried tomatoes over the beef. Sprinkle the seasoning packet evenly across the top, then pour the beef broth over the ingredients.
Look for All ingredients are distributed evenly now.
Tip Use high-quality sun-dried tomatoes packed in oil for a deeper flavor profile.

During the cooking phase, the kitchen will begin to smell savory and aromatic. The broth will darken as it absorbs the seasonings and the juices from the roast. The beef should remain mostly submerged in the liquid. You might notice the tomatoes softening and blending into the broth. Keep the lid sealed tightly to maintain a consistent internal environment. By the end of this phase, the meat will have shrunk slightly and the liquid will have become a flavorful, rich braising stock.

Shredding and finishing

  1. Cook and shred the beef
Cover and cook on low for 8 hours or high for 4 hours. Once the meat is fork-tender, shred it directly in the slow cooker. Ensure the internal temperature reaches at least 145°F (63°C) and let it rest for at least 3 minutes before serving.
Look for Beef shreds easily with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Shredding the meat while it is still in the cooking juices helps it absorb more flavor.

Once the cooking time is complete, the beef should be incredibly soft. Use two forks to pull the meat apart into bite-sized shreds directly within the pot. The meat should easily separate along the muscle fibers without any force.

The mixture of shredded beef, softened sun-dried tomatoes, and the thickened broth should look glossy and cohesive. Before serving, verify that the meat is tender throughout and the internal temperature is safe for consumption, confirming the preparation is a success.

Common mistakes

Avoid lifting the lid of the slow cooker during the first few hours of cooking, as this releases heat and moisture, significantly increasing the required cooking time. Another common mistake is using a cut of meat that is too lean, which can result in dry, stringy beef rather than the desired tender texture.

Finally, do not rush the process; slow-cooked beef requires patience. If the beef is not ready by the expected time, simply continue cooking in one-hour increments until the desired fork-tender consistency is achieved.

How to tell it’s done

The beef is considered done when it reaches an internal temperature of at least 145°F (63°C) and pulls apart easily with a fork. It is important to let the meat rest for at least 3 minutes after shredding to allow the juices to redistribute, which ensures maximum tenderness.

If the meat still offers resistance when you try to shred it, it needs more time in the slow cooker. It should be soft enough to break down with minimal effort, indicating the connective tissues have successfully broken down.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
