Before you start

Before beginning, ensure all ingredients are properly measured and at room temperature. Clean the mushrooms thoroughly using a damp cloth to remove any debris, ensuring they are dry before adding them to the slow cooker.

Mince the garlic finely to ensure it disperses evenly throughout the sauce. Have the heavy cream and parmesan cheese measured and ready near the slow cooker for the final step, as they should be added immediately after the chicken has been shredded to ensure the sauce emulsifies perfectly.

Ingredients at a glance (8)
  • 4 chicken breasts
  • 12 oz mixed wild mushrooms
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 3 sprigs fresh thyme
  • 2 tbsp truffle butter
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese

Instructions

Preparation and Layering

  1. Layering the ingredients
Place the chicken breasts into the bottom of the slow cooker. Add the mixed wild mushrooms, minced garlic, white wine, fresh thyme sprigs, and the truffle butter over the chicken.
Look for Ensure the chicken is evenly distributed at the base for even cooking.
Tip Layering allows the flavors of the wine and truffle butter to infuse the chicken as it cooks.

At this stage, the slow cooker should be filled with the raw ingredients layered according to the instructions.

The mushrooms should be nestled around the chicken, and the garlic, wine, and thyme should be visible. The truffle butter should be placed on top to melt slowly as the heat builds inside the cooker.

Slow Cooking

  1. Slow cooking the chicken
Cover the slow cooker with the lid. Cook on the LOW setting for 4 hours. Once the time is up, ensure the chicken reaches an internal temperature of 165°F (74°C) using a digital meat thermometer. Carefully remove the chicken and shred it using two forks.
Look for The chicken should be tender and easily pull apart with two forks.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during the first 3 hours to maintain consistent heat.

After four hours, the kitchen should be filled with the fragrant aroma of thyme, garlic, and earthy mushrooms. The chicken breasts should be fully cooked, tender, and submerged in a liquid base composed of the white wine and the juices released by the mushrooms and butter.

Final Emulsion

  1. Finishing the sauce
Return the shredded chicken to the pot. Swirl in the heavy cream and the grated parmesan cheese. Stir well until the sauce is velvety and combined. Let the mixture rest for 5 minutes before serving.
Look for The sauce should thicken slightly and appear glossy with the cream and cheese incorporated.
Tip Serve warm over your favorite pasta or risotto for a full meal.

Once the cream and parmesan are added, the sauce should transform into a thick, ivory-colored, and glossy coating. The shredded chicken should look perfectly coated and moist, with the herbs and mushroom pieces evenly distributed throughout the dish, signaling it is ready to be plated.

Common mistakes

A common mistake is adding the heavy cream too early, which can cause the sauce to become thin or separate during the long cook time. Always add the dairy ingredients only after the chicken has been shredded and the cooking cycle is complete.

Another error is failing to use enough mushrooms; these are essential for the sauce's body, so be generous with the quantity. Finally, avoid over-shredding the chicken into tiny pieces, as keeping the shreds slightly larger provides a better mouthfeel.

How to tell it’s done

The chicken is done when it reaches a safe internal temperature of 165°F (74°C). Use an instant-read meat thermometer inserted into the thickest part of the breast to verify.

At this stage, the meat should be opaque throughout and pull away easily with the tines of a fork. If the chicken is not yet at temperature, continue cooking for another 20 minutes before checking again.

  • Poultry: 165°F (74°C) in the thickest part
