Tips for success

To achieve the best texture for your street tacos, briefly char your corn tortillas over an open flame or in a dry cast-iron skillet just before serving. This adds a slight smokiness and prevents the tortillas from breaking when filled with the juicy beef. Keep the charred tortillas warm in a clean kitchen towel until you are ready to assemble the tacos, which keeps them soft and pliable.

If you find the salsa verde is too tart for your preference, you can balance the acidity by adding a small pinch of sugar or a splash of honey to the pot during the last hour of cooking.

This subtle sweetness helps round out the sharp notes of the tomatillos and serrano peppers, creating a more harmonious flavor profile that appeals to a wider range of palates while maintaining the dish's authentic character.

Variations

  • Spicy Tomatillo Beef: For those who prefer more heat, add two extra serrano peppers, finely diced, or a teaspoon of crushed red pepper flakes to the slow cooker at the beginning of the cooking process.
  • Slow-Cooked Beef Burrito Bowls: Serve the shredded beef over a base of cilantro-lime rice and black beans instead of tortillas for a satisfying burrito bowl, topped with avocado slices and fresh radishes.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a sealed freezer-safe bag or container for up to 3 months.
Reheat
Reheat gently in a saucepan over medium-low heat until warmed through, adding a splash of water if the sauce has thickened too much.

Transfer any leftover shredded beef to an airtight container once it has cooled to room temperature, which should take no longer than two hours. Placing the leftovers in the refrigerator promptly ensures safety and quality.

The beef can be stored in the refrigerator for up to three days. For longer storage, the shredded beef and its juices can be frozen in a freezer-safe bag or container for up to three months without losing significant texture or flavor.

This recipe is excellent for make-ahead meals, as the flavors often deepen after sitting in the refrigerator overnight. You can cook the beef completely, shred it, and store it in its juices.

When you are ready to serve, simply reheat the beef gently on the stovetop or in the microwave. This makes it a stress-free option for hosting guests, as the main protein is ready to go, requiring only the assembly of the fresh taco toppings.

Serving ideas

When serving, present the shredded beef in a warm bowl alongside a platter of fresh, charred corn tortillas. Offer a variety of toppings such as crumbled cotija cheese, fresh cilantro, diced white onion, and lime wedges to allow guests to customize their own street tacos.

The combination of the tangy, warm beef and the fresh, cool toppings creates a balanced bite that is traditional and satisfying for any casual dinner gathering.

For a complete meal, consider serving the tacos with a side of Mexican-style rice or a crisp cabbage slaw with lime dressing. The crunch of the slaw provides a nice textural contrast to the tender shredded beef, while the rice helps absorb the flavorful juices from the salsa verde. Ensure there are plenty of napkins available, as these street-style tacos are best enjoyed by hand and can be quite juicy.

Frequently asked questions

Can this recipe be made with a different cut of beef?
Yes, while beef chuck roast is ideal due to its fat content and connective tissue, you can also use a beef brisket or a bottom round roast. Note that cooking times may vary slightly, so check the tenderness of the meat before shredding to ensure it pulls apart easily.
Is it necessary to sear the beef before slow-cooking?
Searing is optional and not strictly required for this recipe. The slow cooker will still produce a delicious result without it. However, if you have extra time, searing the beef in a hot skillet until browned on all sides can add an extra layer of flavor to the final dish.
Why is the beef tough after the recommended cooking time?
If the beef is still tough, it simply needs more time to break down. Every slow cooker heats differently. If the meat is not tender after eight hours, cover it back up and continue cooking on low for another 30 to 60 minutes until it shreds easily with a fork.

Ingredients

  • 3 lb beef chuck roast
  • 600 g char-roasted tomatillo and serrano salsa verde
  • 1 white onion, diced
  • 6 garlic cloves
  • 1 bundle fresh cilantro
  • 12 corn street tortillas, charred
  • cotija cheese, crumbled, for serving

Instructions

  1. Place the beef chuck roast into the basin of your slow cooker. Pour the char-roasted tomatillo and serrano salsa verde evenly over the meat. Add the diced white onion, the whole garlic cloves, and the bundle of fresh cilantro to the pot.
  2. Cover the slow cooker with its lid and set to the LOW heat setting. Cook the beef for 8 hours until it reaches an internal temperature of 145°F (63°C). Once cooked, let the meat rest for at least 3 minutes before shredding.
  3. Remove the cilantro bundle. Use two forks to shred the tender beef directly inside the pot, incorporating it into the bubbling green juices. Serve the shredded beef on charred corn tortillas topped with crumbled cotija cheese and fresh cilantro.
