Before you start

Before starting, ensure the slow cooker insert is clean and dry. Remove the pork roast from the refrigerator about 20 minutes before beginning, as this allows the meat to reach a consistent starting temperature.

Have all seasoning packets opened and ready, and measure the water precisely to ensure the correct consistency for the gravy. Ensure there is enough space on the counter for the slow cooker away from other appliances.

Ingredients at a glance (7)
  • 3 lb boneless pork shoulder roast
  • 1 lb baby carrots
  • 1 lb potatoes, halved
  • 1 pkt ranch seasoning mix
  • 1 pkt Italian seasoning mix
  • 1 pkt brown gravy seasoning mix
  • 1 cup water

Instructions

Assembling the roast

  1. Prepare the slow cooker
Place the boneless pork shoulder roast into the base of the slow cooker. Scatter the baby carrots and halved potatoes evenly around the sides of the pork to ensure they cook thoroughly in the juices.
Look for The roast is centered and vegetables are distributed around it.
Tip Ensure the vegetables are not piled too high to allow the lid to seal completely.

The pork roast should be placed securely in the bottom of the slow cooker. The vegetables must be arranged in the gaps around the meat to ensure they are partially submerged in the cooking liquid. Confirm the slow cooker is plugged in and the cord is not touching any hot surfaces or water.

Adding seasonings

  1. Season and add liquid
Sprinkle the ranch seasoning, Italian seasoning, and brown gravy seasoning mix over the top of the pork and vegetables. Pour the water into the slow cooker, carefully avoiding washing the seasoning off the meat.
Look for The seasoning coats the top of the roast and the liquid settles at the bottom.
Tip Using a dry measuring cup helps pour the water steadily without splashing the seasonings.

The seasoning packets should be evenly distributed across the top of the meat and vegetables. The water should be poured carefully to create a base liquid. Check that the seasoning has not been completely washed away by the water and remains primarily on the surface of the roast for maximum flavor infusion.

Slow cooking to completion

  1. Cook and serve
Cover and cook on low for 8 hours or until the pork reaches an internal temperature of 145°F (63°C). Once cooked, let the pork rest for at least 3 minutes before shredding or slicing. Serve the tender pork with the braised vegetables and the thickened gravy from the bottom of the slow cooker.
Look for The meat is fork-tender and pulls apart easily, and the gravy has thickened.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check the temperature at the thickest part of the roast to ensure it is fully cooked.

The pork must be cooked until it is tender enough to shred easily. The gravy should have thickened and the vegetables should be tender.

Verify the internal temperature of 145°F (63°C) and ensure the meat has rested for 3 minutes. The kitchen should smell savory and aromatic, indicating the flavors have melded.

Common mistakes

A common mistake is lifting the lid during the cooking process, which releases essential heat and moisture, significantly increasing the total cooking time.

Another error is using a roast that is too lean, such as a tenderloin, which will dry out during the long cook. Ensure the seasoning packets are not clumped together, as this can create pockets of intense flavor rather than a balanced sauce.

How to tell it’s done

The pork is done when it is fork-tender and reaches an internal temperature of at least 145°F (63°C). Use a meat thermometer inserted into the thickest part of the roast to verify this.

The meat should pull apart easily with a fork, and the vegetables should be soft when pierced with a knife. Allow the roast to rest for at least 3 minutes before serving to ensure the juices redistribute.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
