Before you start

Before you start, pat the chicken thighs dry with paper towels. There is no need to season them—the teriyaki glaze provides plenty of salt and flavor.

Prepare the ginger by peeling and cutting it into thin matchsticks, and trim the scallions into 2-inch pieces. Measure the teriyaki glaze and sesame seeds so everything is ready to layer in the slow cooker. Have a 6-quart slow cooker clean and ready.

Ingredients at a glance (6)
  • 6 boneless skinless chicken thighs (about 2 lb total)
  • 3 tbsp fresh ginger, julienned
  • 4 scallions, cut into 2-inch batons
  • 1 cup teriyaki glaze
  • 1 tbsp toasted sesame seeds
  • Steamed jasmine rice, for serving

Instructions

Layer and Cook

  1. Layer the Chicken and Aromatics
Place the chicken thighs in a single layer in the bottom of a 6-quart slow cooker. Scatter the julienned ginger and scallion batons evenly over the chicken. Pour the teriyaki glaze over everything, making sure the sauce coats the chicken and aromatics. Sprinkle the toasted sesame seeds on top.
Look for The chicken is covered with sauce and scattered with ginger, scallions, and sesame.
Tip Do not stir—layering keeps the aromatics on top where they soften and caramelize.
  2. Cook on Low
Cover the slow cooker and cook on low for 4 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The sauce will bubble gently and reduce slightly.
Look for The sauce is bubbling at the edges and the chicken is pulling apart easily.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid during cooking; each peek adds 20 minutes to the cook time.

At the end of this phase, the slow cooker will be bubbling gently around the edges, and the kitchen will smell sweet and savory.

The chicken should be fork-tender and the sauce will have reduced slightly. Check that the chicken reaches 165°F (74°C) before moving on.

Shred and Thicken

  1. Shred the Chicken
Using two forks, shred the chicken thighs directly in the slow cooker. Stir the shredded chicken into the glaze so every piece is coated. The ginger and scallions will have softened and melded into the sauce.
Look for The chicken shreds easily and the sauce clings to each piece.
Tip For larger chunks, leave some pieces intact; for finer shreds, pull more thoroughly.
  2. Thicken the Glaze (Optional)
If the sauce is thinner than you like, transfer the shredded chicken to a plate using a slotted spoon. Set the slow cooker to high and let the sauce simmer uncovered for 10 to 15 minutes, until it thickens and reduces. Return the chicken to the pot and stir to coat.
Look for The sauce coats the back of a spoon and has reduced by about a third.
Tip This step is only needed if you prefer a thicker, more clingy glaze.

The shredded chicken should be completely coated in a glossy, caramel-brown glaze. The ginger and scallions will have softened and melded into the sauce. If the sauce is too thin, this is the time to reduce it.

Serve

  1. Serve Over Rice
Spoon a generous portion of steamed jasmine rice onto each plate. Top with the teriyaki chicken and a ladle of the glaze from the slow cooker. Garnish with extra toasted sesame seeds or sliced scallions if desired.
Look for The rice is steaming and the chicken is glossy with glaze.
Tip For a complete meal, add a side of steamed bok choy or broccoli.

The plated dish should show steaming jasmine rice topped with glistening chicken and a generous spoonful of the sauce. The sesame seeds add a subtle crunch and nutty aroma. Serve immediately while hot.

Common mistakes

A common mistake is lifting the lid to check on the chicken, which lets out heat and extends the cooking time. Another is using a thin teriyaki sauce that never thickens; if yours is thin, plan to reduce it after cooking.

Overcooking the chicken can dry it out, so stick to the 4-hour mark on low. Finally, do not skip the ginger—it is the flavor backbone of this dish.

How to tell it’s done

The chicken is done when it shreds easily with a fork and the internal temperature reads 165°F (74°C) on an instant-read thermometer.

The sauce should be bubbly and slightly thickened, and the chicken should look caramelized and glossy. If the sauce is too thin, simmer it uncovered on high for 10 to 15 minutes after removing the chicken.

  • Poultry: 165°F (74°C) in the thickest part
