Tips for success

To enhance the depth of the tomato gravy, consider adding a tablespoon of tomato paste to the skillet just after searing the beef, cooking it for one minute to caramelize. A splash of Worcestershire sauce or a pinch of dried thyme added to the gravy can also elevate the savory profile of the dish.

Always ensure the slow cooker lid remains tightly closed during the cooking cycle, as lifting the lid releases valuable steam and can extend the cooking time significantly.

If the gravy appears too thin at the end of the cooking cycle, whisk a tablespoon of cornstarch with two tablespoons of cold water to create a slurry.

Stir this mixture into the bubbling slow cooker during the last thirty minutes of cooking on the high setting. Conversely, if the gravy is too thick, stir in a small amount of warm beef broth to reach the desired velvety consistency before serving.

Variations

  • Spicy Tomato Gravy: Add a pinch of crushed red pepper flakes or a diced jalapeño to the slow cooker for a subtle kick.
  • Mushroom Swiss Steak: Stir in eight ounces of sliced cremini mushrooms along with the onions and green peppers.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze in a freezer-safe container or heavy-duty bag for up to 3 months; thaw overnight in the refrigerator.
Reheat
Reheat gently in a saucepan over medium-low heat until hot, or in the microwave in a microwave-safe dish.

Store any leftover Swiss steak, vegetables, and tomato gravy in an airtight container in the refrigerator within two hours of cooking.

Kept properly, the leftovers will remain fresh and flavorful for up to three to four days. The flavors often deepen and improve after a day in the fridge, making this dish taste even better the next day.

This recipe is highly suitable for making ahead. The entire dish can be cooked fully, cooled completely, and stored in the refrigerator. When ready to serve, simply reheat the steak and vegetables gently.

Alternatively, prep the vegetables and portion the beef the night before, storing them in separate airtight containers in the refrigerator to save time in the morning before starting the slow cooker.

Serving ideas

Serve the tender Swiss steak hot, spooning generous amounts of the rich tomato gravy, softened green peppers, and onions directly over the beef. The tender baby yellow potatoes make a perfect built-in side dish, absorbing the savory flavors of the braising liquid beautifully.

For an even heartier presentation, serve this dish alongside a crisp green salad or warm, crusty bread to soak up every drop of the delicious gravy. A simple side of steamed green beans or roasted carrots adds a nice touch of color and texture to the plate, making for a beautifully balanced comfort meal.

Frequently asked questions

Can chuck steak be used instead of round steak?
Yes, chuck steak is an excellent alternative. It has more marbling and becomes incredibly tender and flavorful when slow-cooked in the tomato gravy.
How can the tomato gravy be thickened if it is too watery?
Mix one tablespoon of cornstarch with two tablespoons of cold water to create a slurry, stir it into the slow cooker, and cook on high for fifteen minutes.
Is it safe to skip searing the beef?
While the meat will still cook, searing is highly recommended as it locks in juices, develops deep caramelized flavors, and helps thicken the gravy.

Slow Cooker Swiss Steak with Rich Tomato Gravy

Prep 15 minCook 6 hRest 3 minTotal 6 h 18 minServes 4
Tender Swiss steak portion served inside a black slow cooker surrounded by green peppers and baby yellow potatoes

Ingredients

  • 2 lb beef round steak, cut into portions
  • 1/2 cup all-purpose flour, for dredging
  • 1 large green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 1 lb baby yellow potatoes, halved
  • 2 cups tomato gravy

Instructions

  1. Place the all-purpose flour in a shallow dish. Dredge each portion of the beef round steak in the flour, coating all sides evenly, and gently tap off any excess before searing.
  2. Heat a heavy skillet over medium-high heat. Add the dredged beef portions and sear for 2 to 3 minutes per side until a deep golden-brown crust forms, then transfer the meat to the bottom of the slow cooker.
  3. Layer the sliced green bell peppers, sliced yellow onions, and halved baby yellow potatoes directly on top of and around the seared beef portions inside the slow cooker insert, distributing them evenly.
  4. Pour the tomato gravy over the beef, vegetables, and potatoes in the slow cooker, ensuring the liquid covers most of the ingredients to facilitate braising.
  5. Cover and cook on low for 6 to 8 hours (or on high for 3 to 4 hours) until the baby potatoes are tender and the beef is fork-tender, reaching an internal temperature of at least 145°F (63°C). Let the beef rest for at least 3 minutes before serving.
