Tips for success
For the best texture, cut the chicken into uniform cubes so they cook evenly. If using chicken thighs, they will be even more forgiving and tender. To make this dish spicier, add a pinch of red pepper flakes or a drizzle of sriracha before serving.
For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 15 minutes of cooking.
This recipe is incredibly versatile. Serve it over rice, noodles, or even in lettuce wraps for a lighter meal. The sweet-and-spicy glaze also works well with shrimp or tofu—just adjust the cooking time accordingly.
Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day as the flavors meld.
Variations
- Spicy Mango Teriyaki: Substitute 1 cup of diced fresh mango for the pineapple and add 1 teaspoon of sriracha to the glaze. The mango breaks down into a silky sauce with a tropical sweetness.
- Garlic Ginger Chicken: Add 4 minced garlic cloves and 1 tablespoon of grated fresh ginger to the glaze before pouring over the chicken. This boosts the savory depth and pairs well with the pineapple.
- Coconut Teriyaki: Replace half of the teriyaki glaze with 1/4 cup of coconut milk and add 1/2 teaspoon of red curry paste. The coconut adds richness and a subtle exotic flavor.
- Sesame Orange Chicken: Add 2 tablespoons of orange juice and 1 teaspoon of orange zest to the glaze. Finish with an extra sprinkle of sesame seeds and a few orange slices for garnish.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of water if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until hot and bubbly. Add a splash of water or broth to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of water or chicken broth when reheating to loosen it. For best flavor, bring to room temperature for 15 minutes before reheating.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on LOW as directed.
Add 15-20 minutes to the cook time if starting from cold. Alternatively, cook the full recipe, then cool and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the chicken and sauce over steamed jasmine rice to soak up every drop. A side of steamed broccoli or a simple green salad adds freshness and crunch. For a low-carb option, serve over cauliflower rice or alongside roasted vegetables. Garnish with extra sesame seeds, sliced green onions, or a squeeze of lime for brightness.
This dish is perfect for family dinners, meal prep, or casual gatherings. The sweet-heat flavor appeals to a wide range of palates, and the hands-off cooking makes it a stress-free option.
Pair it with a crisp Asian slaw or pickled vegetables for a refreshing contrast. The leftovers are great in tacos, over rice bowls, or as a filling for lettuce wraps.

Slow-Cooker Sweet Teriyaki Chicken Bites

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 1 can (20 oz) pineapple tidbits in juice, drained
- 2-3 fresh jalapeños, sliced into rings
- 1/2 cup teriyaki glaze (thick, not thin sauce)
- 1 tbsp toasted sesame seeds
- Steamed jasmine rice, for serving
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Spread the drained pineapple tidbits and sliced jalapeño rings evenly over the chicken. Pour the teriyaki glaze over the top, and sprinkle with the toasted sesame seeds. Do not stir—the layers will meld as they cook.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. The glaze will thin as the chicken releases juices, then thicken as it reduces.
- Using an instant-read thermometer, check that the thickest piece of chicken registers at least 165°F (74°C). If not, continue cooking for another 15-30 minutes and check again.
- If the sauce is thinner than you like, use a slotted spoon to transfer the chicken and fruit to a serving dish, leaving the sauce in the slow cooker. Set the slow cooker to HIGH and let the sauce bubble, uncovered, for 10-15 minutes, stirring occasionally, until it reduces and thickens slightly.
- Spoon the hot chicken, pineapple, and jalapeños over steamed jasmine rice. Drizzle with the reduced sauce from the slow cooker and sprinkle with extra sesame seeds if desired. Serve immediately.
