Before you start

Before starting, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Take the pork shoulder out of the refrigerator about 20 minutes before you begin to take the chill off the meat, which helps with even cooking.

Have your onions sliced and ready, and measure out your sugar and garlic powder so they are within reach. Verify that your slow cooker is plugged in and the ceramic insert is properly seated in the heating base before you begin layering the ingredients.

Ingredients at a glance (5)
  • 4 lb boneless pork shoulder, cut into large chunks
  • 1 large sweet onion, sliced into rings
  • 1/2 cup brown sugar
  • 1 tbsp garlic powder
  • 2 cups sweet tea

Instructions

Layering the ingredients

  1. Layering the ingredients
Place the large chunks of pork shoulder into the base of the slow cooker. Arrange the sliced sweet onion rings in an even layer over the top of the meat. Sprinkle the brown sugar and garlic powder evenly across the onions and pork.
Look for Ensure the pork is distributed across the bottom of the vessel for even cooking.
Tip Removing excess surface fat from the pork shoulder before layering will result in a cleaner, less greasy finished sauce.

The pork chunks should be snugly arranged at the base of the slow cooker, topped with an even layer of onion rings and the dry seasonings.

Everything should look organized and ready for the liquid addition. Check that the pork is distributed in a way that allows the heat to reach all pieces equally during the long braising process.

Adding the liquid and braising

  1. Adding the liquid and braising
Pour the sweet tea over the layered ingredients in the slow cooker. Cover with the lid and set the device to cook on low for 8 hours. Allow the pork to braise undisturbed to ensure the fibers become tender and the tea infuses the meat with flavor.
Look for The tea should partially submerge the pork and onions to facilitate proper braising.
Tip Avoid lifting the lid during the first few hours of cooking to maintain a consistent internal temperature.

The sweet tea should be poured carefully over the pork and onions. Once the lid is secure, the slow cooker should be left to do its work. Listen for the faint sound of simmering liquid as the device reaches temperature. Ensure the setting is correct and that the cord is safely positioned away from the heat source.

Shredding and resting

  1. Shredding and resting
Once the cooking time is complete, verify that the pork reaches an internal temperature of 145°F (63°C). Carefully remove the pork chunks to a platter and shred them using two forks. Return the shredded meat to the juices, let it rest for at least 3 minutes, then serve warm.
Look for The pork is done when it shreds easily with minimal effort and the juices are aromatic.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce is too thin, simmer it in a separate saucepan over medium-high heat until it reaches your desired consistency.

At the end of the cooking time, the pork should look dark, tender, and saturated with the tea-based liquid. The onions should be almost translucent and integrated with the meat. Use a meat thermometer to confirm the 145°F (63°C) mark. Once shredded, let the meat rest briefly in the juices to reabsorb flavor before serving.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the pork from cooking evenly. Another issue is lifting the lid too frequently, which allows heat to escape and increases the total cooking time significantly.

Ensure you do not add too much liquid; the tea should only partially cover the meat, as the pork will release its own juices as it cooks. Finally, failing to let the meat rest for at least 3 minutes before shredding can result in a loss of moisture.

How to tell it’s done

The pork is properly cooked when it reaches an internal temperature of 145°F (63°C). Visually, the meat should be opaque and shred easily when pulled with two forks.

If you find resistance, continue cooking for an additional 30 minutes, as the meat may need more time to break down. The liquid in the pot should be fragrant and slightly thickened, with the onions having softened significantly into the braising juices.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
