Tips for success

For the fluffiest sweet potato soufflé, beat the hot potatoes with the butter and sugar first, then add the eggs and beat just until incorporated. Overbeating after adding eggs can make the mixture tough.

If you have time, let the boiled sweet potatoes steam dry for a few minutes before mashing to remove excess moisture, which helps the soufflé set properly.

To get perfectly melted marshmallows without burning, sprinkle them evenly and press them gently into the hot casserole. Cover and let them steam for 10 minutes; if you prefer a toasty top, switch the slow cooker to HIGH and leave the lid off for the last 2 minutes, watching closely.

For a more pronounced caramelized layer, broil the casserole in the oven for 1–2 minutes after slow-cooking, but only if your slow cooker insert is oven-safe.

Variations

  • Maple Pecan: Replace the brown sugar in the streusel with 1/4 cup maple syrup and reduce the butter to 3 tablespoons. Drizzle 2 tablespoons of maple syrup over the sweet potato base before adding the streusel for extra maple flavor.
  • Bourbon Brown Sugar: Add 2 tablespoons of bourbon to the sweet potato mixture along with the vanilla. The alcohol cooks off, leaving a warm, smoky depth that pairs well with the pecans.
  • Candied Ginger: Fold 1/4 cup finely chopped crystallized ginger into the sweet potato base. The spicy-sweet ginger adds a bright contrast to the rich, caramelized topping.
  • Pumpkin Spice: Swap the cinnamon for 1 1/2 teaspoons of pumpkin pie spice. This adds a blend of nutmeg, cloves, and allspice for a more complex holiday flavor.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The marshmallows may lose some puffiness but will still be delicious. Reheat individual portions in the microwave for 1–2 minutes, or in a 350°F (175°C) oven for 10–15 minutes until warmed through.

The sweet potato base can be prepared up to 2 days ahead and stored in the refrigerator. Assemble the casserole in the slow cooker, add the streusel, and refrigerate overnight.

Increase the slow-cook time by 30 minutes if starting from cold. The marshmallows should be added only during the last 10 minutes of cooking.

Serving ideas

Serve this sweet potato bake warm as a dessert with a scoop of vanilla ice cream or a drizzle of heavy cream. It also pairs beautifully with roasted meats like turkey or ham, making it a versatile addition to a holiday table.

For a festive touch, sprinkle a pinch of flaky sea salt over the marshmallows just before serving to balance the sweetness.

For individual servings, scoop into small bowls and top with extra toasted pecans or a dusting of cinnamon. The casserole is best enjoyed fresh, but leftovers are just as tasty the next day—try them spooned over Greek yogurt or oatmeal for a decadent breakfast. Reheat gently to restore the gooey texture.

Frequently asked questions

Can this sweet potato casserole be made ahead of time?
Yes, the sweet potato base can be prepared up to 2 days ahead and stored in the fridge. Assemble the casserole in the slow cooker, add the streusel, and refrigerate. Increase the slow-cook time by 30 minutes when starting from cold. Add the marshmallows only during the last 10 minutes of cooking.
Why is the streusel not caramelizing?
If the streusel isn't browning, the slow cooker may not be hot enough or the lid was opened too often. Make sure to cook on HIGH and avoid lifting the lid during the 2.5 hours. If needed, extend the cook time by 30 minutes, checking for bubbling edges and a golden color.
Can this recipe be made without eggs?
Yes, you can substitute each egg with 1/4 cup unsweetened applesauce or a commercial egg replacer. The texture will be slightly less custardy but still delicious. Note that the casserole may be a bit softer, so let it rest longer before serving.
How do you prevent the marshmallows from burning?
Add the marshmallows only during the last 10 minutes of cooking, and cover the slow cooker immediately. If you want a toasted top, use the broiler for 1–2 minutes, but watch closely. For a softer marshmallow layer, let them steam without lifting the lid for the full 10 minutes.
Can this be cooked on LOW instead of HIGH?
Yes, you can cook on LOW for 4 to 5 hours instead of 2.5 hours on HIGH. The streusel will caramelize more gently. The marshmallows should still be added during the last 10 minutes. Check for doneness by ensuring the center is hot and the eggs are set.
