Before you start

Before starting, ensure your slow cooker insert is clean and dry. Have all your ingredients measured and ready to go. Remove the sweet Italian sausage from its casings if necessary. Break the lasagna noodles into pieces that will fit comfortably in your slow cooker.

Since this recipe uses raw meat, maintain a clean workspace and wash your hands thoroughly after handling the raw sausage to avoid cross-contamination. Keep the marinara sauce and cheese within reach for quick assembly.

Ingredients at a glance (5)
  • 1 lb sweet Italian sausage, removed from casings
  • 8 oz lasagna noodles, broken into pieces
  • 1 packet Italian seasoning blend
  • 24 oz marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

Layering the ingredients

  1. Layering the base
Place the raw sweet Italian sausage pieces into the bottom of the slow cooker, spreading them out to ensure even cooking throughout the base of the insert.
Look for Sausage pieces are evenly distributed across the bottom of the slow cooker.
Tip Removing the sausage from the casings before adding ensures it crumbles naturally as it cooks.
  2. Adding noodles and seasoning
Scatter the broken lasagna noodles over the sausage layer, then sprinkle the Italian seasoning packet evenly over the noodles to provide consistent flavor.
Look for Noodles are scattered in an even layer over the sausage.
Tip Break the noodles into smaller, bite-sized pieces so they fit easily into the slow cooker and cook evenly.

At the end of this phase, the raw sausage should be evenly spread across the bottom of the slow cooker, covered by a layer of broken noodles, and topped with the seasoning packet. Ensure that the noodles are not clumped together in one area, as this can prevent them from cooking evenly. Once the layers are in place, you are ready to add the marinara sauce and begin the slow cooking process.

Slow cooking

  1. Adding sauce and cooking
Pour the marinara sauce over the noodles, ensuring they are fully covered. Cover the slow cooker with the lid and cook on high for 4 hours until the sausage reaches 160°F (71°C).
Look for Sauce is bubbling and noodles are tender.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the noodles are submerged in the sauce to prevent them from drying out during the long cooking process.

During the cooking phase, the lasagna will develop a rich, savory aroma as the sausage cooks in the marinara sauce. The noodles will gradually absorb the liquid, becoming soft and tender.

By the end of the four-hour cooking time, the sauce should be thick and bubbling. Before moving to the final step, verify that the sausage has reached a safe internal temperature of 160°F (71°C) using a meat thermometer.

Finishing with cheese

  1. Melting the cheese
Open the lid, sprinkle the shredded mozzarella cheese over the top, and cover again for 5 minutes until the cheese is melted and bubbly.
Look for Cheese is fully melted and golden in spots.
Tip Turn off the slow cooker before adding the cheese to prevent the bottom from burning while the top melts.

The final phase involves adding the shredded mozzarella cheese to the top of the hot lasagna. Once the lid is replaced, the residual heat will melt the cheese into a gooey, delicious layer within about five minutes. Watch for the cheese to turn completely soft and begin to bubble. Once it reaches this state, the dish is ready to be portioned onto plates and served immediately while hot.

Common mistakes

Avoid lifting the lid frequently during the cooking process, as this releases the trapped steam and heat necessary for the noodles to cook properly. Lifting the lid too often will significantly increase your cooking time and may result in unevenly cooked pasta.

Another common mistake is overfilling the slow cooker, which can cause the sauce to boil over. Always leave at least an inch of space at the top of the insert. Finally, ensure the sausage pieces are distributed throughout the bottom rather than piled in one spot.

How to tell it’s done

The lasagna is finished when the sausage has reached an internal temperature of 160°F (71°C) and the noodles are tender to the bite. The sauce should be thickened and bubbling around the edges of the slow cooker.

When you insert a fork into the center, it should slide through the noodles with minimal resistance. The cheese topping should be completely melted and slightly browned in spots, indicating that the final step is complete and the dish is ready for serving.

  • Ground meat: 160°F (71°C) in the thickest part
