Before you start

Before beginning, ensure your slow cooker insert is clean and dry. Take the beef chuck roast out of the refrigerator about 20 minutes before you are ready to start, as this helps it cook more evenly.

Gather all your ingredients, including the soy sauce, seasoning, sweet chili sauce, and beef broth, so you can assemble the dish quickly. Have two forks ready for the shredding stage, which will make the final step much easier once the beef is fully cooked and tender.

Ingredients at a glance (5)
  • 3 lb beef chuck roast
  • 1/2 cup soy sauce
  • 1 packet garlic and ginger seasoning
  • 1 cup sweet chili sauce
  • 1/2 cup beef broth

Instructions

Assembly Phase

  1. Prepare the Slow Cooker
Place the beef chuck roast into the bottom of the slow cooker insert. Ensure the meat is positioned centrally to allow for even heat distribution during the long cooking process.
Look for The beef should sit flat on the bottom of the slow cooker.
Tip Trim any excess large pieces of fat if preferred before placing the roast in the cooker.

At the end of this phase, the beef should be nestled securely at the bottom of the slow cooker. The ingredients should be layered, and the liquids should be ready to be poured. Everything should look organized and ready for the long, slow heat. Check that the lid fits properly to ensure a tight seal throughout the cooking cycle.

Cooking Phase

  1. Add Aromatics and Liquids
Pour the soy sauce over the beef. Sprinkle the garlic and ginger seasoning evenly across the surface of the meat. In a separate glass measuring cup, combine the sweet chili sauce with the beef broth, then pour this mixture over the seasoned roast.
Look for The liquid should partially cover the sides of the roast.
Tip Mixing the sauce and broth before pouring ensures a consistent flavor profile throughout the cooking.

During this phase, the slow cooker will fill the kitchen with the savory aroma of ginger and soy. The beef will gradually soften, and the sauce will thicken slightly as it combines with the rendered juices from the roast.

Check that the appliance is set to the correct heat setting and that the liquid level remains consistent throughout the process.

Finishing Phase

  1. Cook and Shred
Cover the slow cooker and cook on low for 8 hours. Once the time is up, remove the beef and shred it using two forks. Ensure the internal temperature of the beef reaches at least 145°F (63°C). Let the meat rest for at least 3 minutes before serving to maintain its juices.
Look for The beef should be very tender and pull apart easily with minimal pressure.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce is too thin after shredding, simmer it in a saucepan for a few minutes to thicken.

The final phase involves shredding the tender beef. The meat should look dark, glazed, and exceptionally moist. As you shred, the fibers should separate into thin, uniform pieces that are coated in the thickened sweet chili sauce. The final result should be steaming and fragrant, ready for immediate serving on your choice of sides.

Common mistakes

Avoid lifting the lid of the slow cooker during the first few hours of cooking, as this releases heat and steam, significantly increasing the total cooking time. Another common mistake is cutting the meat into small pieces before cooking; larger chunks or a whole roast are much better for slow cooking as they remain juicier.

Finally, do not rush the shredding process. If the meat does not pull apart easily, it likely needs more time in the slow cooker to break down the connective tissue properly.

How to tell it’s done

The beef is done when it is fork-tender and pulls apart easily with little resistance. Before serving, verify that the thickest part of the meat has reached an internal temperature of at least 145°F (63°C). Using a meat thermometer is the most accurate way to ensure safety.

Once this temperature is reached, allow the meat to rest for at least 3 minutes; this resting period is crucial for the juices to redistribute, resulting in a more succulent final product that maintains its moisture.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
