Before you start

Before starting, ensure all ingredients are ready. Rinse the peppers and slice them into uniform strips for even cooking. Ensure the chicken is fully thawed if previously frozen, as cooking from frozen is not recommended for food safety.

Have your slow cooker clean and placed on a stable surface away from the edge of the counter to prevent accidental spills during the long cooking duration.

Ingredients at a glance (4)
  • 6 boneless skinless chicken thighs
  • 2 cups red and yellow pepper strips
  • 1 tbsp minced garlic
  • 1 cup sweet chili sauce

Instructions

Preparation and layering

  1. Assemble the ingredients
Place the boneless skinless chicken thighs in the base of the slow cooker, arranging them in a single flat layer to ensure even cooking throughout the process.
Look for Chicken is arranged in a flat layer.
Tip Do not overlap the chicken too much to help it cook evenly.

The chicken is neatly tiled in the slow cooker base. This creates the foundation for the meal. Ensure the thighs do not overlap too heavily, as this can create cold spots where the meat might cook unevenly. The goal is a uniform layer that will be completely submerged or covered by the incoming sauce and vegetables.

Adding aromatics and sauce

  1. Add aromatics and sauce
Scatter the red and yellow pepper strips evenly over the chicken pieces. Sprinkle the minced garlic over the peppers, then pour the sweet chili sauce over the entire mixture to coat everything thoroughly.
Look for Sauce is evenly distributed over the peppers and chicken.
Tip Spread the peppers to cover as much of the chicken as possible.

The peppers are spread over the top, followed by the garlic and a generous pour of sweet chili sauce. At this stage, ensure the sauce covers the peppers and chicken as much as possible.

The aroma should be fresh and slightly sweet. Verify that no ingredients are stuck to the sides of the cooker, which could burn during the long cooking cycle.

Slow cooking to perfection

  1. Cook and serve
Cover and cook on low for 4 hours until the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving.
Look for Chicken is tender and cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer to verify the safe internal temperature.

The chicken is tender, the peppers are soft, and the sauce has thickened into a glossy, pourable glaze. The kitchen should smell fragrant and savory. The chicken must be fork-tender and reach the required safe internal temperature. Check that the sauce has not reduced too much; if it looks very thick, a splash of water can be added.

Common mistakes

A common mistake is overcrowding the slow cooker. Placing the chicken in a single layer is crucial for even heat distribution. Another error is checking the food too frequently; opening the lid lets out precious heat and steam, which significantly increases the total cooking time.

Trust the process and keep the lid closed. Finally, ensure the garlic is minced finely so it distributes flavor evenly rather than leaving large, pungent chunks in the final sauce.

How to tell it’s done

The chicken is perfectly done when it reaches an internal temperature of 165°F (74°C). Use a digital meat thermometer inserted into the thickest part of the thigh to ensure accuracy. The meat should be opaque throughout and pull apart easily with a fork.

If the chicken is not quite there, continue cooking for another 20 minutes and check again. Always allow the meat to rest for at least 5 minutes before serving to lock in the juices.

  • Poultry: 165°F (74°C) in the thickest part
