Before you start

Before you begin, ensure your slow cooker is clean and placed on a flat, heat-resistant surface away from any splashes. Take the pork chops out of the refrigerator about 20 minutes before you start to allow them to lose some of their chill, which promotes more even cooking.

Peel and slice your yellow onion into uniform rings, ensuring they are thick enough to hold their shape during the long braising process. Have your brown sugar, ketchup, and Worcestershire sauce measured and ready to go for a quick assembly.

Ingredients at a glance (5)
  • 4 bone-in pork chops
  • 1 yellow onion, sliced into rings
  • 1/4 cup brown sugar
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce

Instructions

Layering the ingredients

  1. Prepare the slow cooker base
Place the bone-in pork chops into the bottom of the slow cooker, arranging them in a single layer so they cook evenly. Top the pork chops with the sliced yellow onion rings to ensure they soften and release their flavor throughout the cooking process.
Look for ensure the chops are in a single layer
Tip trim any excess fat from the edges of the chops if desired for a cleaner sauce

The pork chops should be arranged in a single layer at the bottom of the slow cooker, with the onion rings evenly distributed on top.

This setup allows the onions to soften while protecting the pork from direct heat, while the surrounding space remains clear for the sauce to circulate properly throughout the cooking duration.

Adding the sauce and slow cooking

  1. Add seasoning and sauce
Evenly sprinkle the brown sugar over the onions and pork chops. Pour the ketchup and Worcestershire sauce over the top, ensuring the liquid is distributed across the meat. Cover the slow cooker with the lid and set it to cook on low for 6 to 8 hours.
Look for the sauce ingredients are poured evenly
Tip do not stir the ingredients, as the sauce will naturally combine during the long cook time

After adding the brown sugar, ketchup, and Worcestershire sauce, the slow cooker should be covered securely. The liquid will begin to combine with the juices released by the pork and onions. The kitchen should start to smell savory and slightly sweet as the braising process begins to tenderize the meat fibers.

Finishing and serving

  1. Finish and serve
Once the cooking time is complete, verify that the pork chops have reached an internal temperature of 145°F (63°C). Carefully remove the chops from the slow cooker and let them rest for at least 3 minutes before serving. Serve each chop topped with the braised onions and a spoonful of the tangy sauce from the bottom of the slow cooker.
Look for the meat is tender and easily pulls away from the bone
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip the sauce can be thickened in a saucepan over medium heat if a more concentrated consistency is preferred

The pork chops should be perfectly braised, showing a soft, moist surface and a deep color from the sauce. The onions should be translucent and very tender. Before serving, verify the internal temperature of 145°F (63°C) and ensure the pork has rested for 3 minutes to maintain its optimal texture and flavor.

Common mistakes

A common mistake is overcrowding the slow cooker or layering the ingredients too high, which can lead to uneven cooking. Always keep the pork in a single layer for the best results.

Another error is overcooking; while slow cookers are forgiving, leaving the pork in for too long can cause the meat to fall apart too much or become stringy. Start checking the temperature at the lower end of the cooking time range to ensure the meat stays perfectly tender and succulent.

How to tell it’s done

To determine if the pork chops are done, use a digital meat thermometer inserted into the thickest part of the meat, avoiding the bone. The internal temperature must reach 145°F (63°C).

At this stage, the meat should feel very tender when pierced with a fork and should have a slightly glazed, soft surface. If the chops are not quite there, continue cooking for an additional 20 minutes and check again. Remember to let the pork rest for 3 minutes before serving to lock in the juices.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
