Before you start

Before you begin, ensure your workspace is clean and clear of clutter. Take your chicken thighs out of the refrigerator about 20 minutes before you start to take the chill off, but do not leave them out longer than 30 minutes for food safety reasons.

Measure out your ingredients, especially the gochujang sauce, to ensure a smooth assembly process. If you are using a slow cooker liner, now is the time to insert it for easier cleanup. Have two forks ready nearby, as you will need them to shred the chicken once it is fully cooked and tender.

Ingredients at a glance (4)
  • 2 lb chicken thighs, boneless and skinless
  • 1 large onion, thinly sliced
  • 1 tsp garlic powder
  • 1/2 cup gochujang sauce, whisked until smooth

Instructions

Preparation and assembly

  1. Assemble the slow cooker
Place the raw chicken thighs into the basin of the slow cooker. Scatter the sliced onions evenly over the chicken, then sprinkle the garlic powder over the top to season the meat.
Look for The chicken is arranged in a single layer if possible for even cooking.
Tip Ensure the onions are distributed well so they soften and create a flavorful bed for the chicken.

At this stage, the slow cooker is filled with raw chicken, sliced onions, and the gochujang sauce. The ingredients should be layered carefully, with the onions providing a base and the sauce poured over the top. Check that the chicken is relatively evenly distributed so that all pieces are exposed to the heat and sauce. Ensure the lid is securely closed before you set the timer, as this is critical for the slow-cooking process to begin correctly.

Slow cooking phase

  1. Add the sauce
Pour the whisked gochujang sauce directly over the chicken and onions. Ensure the sauce covers as much of the chicken as possible to allow the flavors to penetrate the meat during the cooking process.
Look for The sauce is poured evenly to coat the contents of the slow cooker.
Tip Whisk the gochujang sauce with a tablespoon of water if it seems too thick to pour easily.

During the cooking phase, the kitchen will begin to smell savory and slightly spicy. You should avoid opening the lid, as the goal is to maintain a consistent environment. If you peek, ensure you do it quickly.

The chicken is cooking through the gentle heat, allowing the onions to break down into the sauce. By the end of this phase, the meat should look opaque and the sauce should have a rich, deep red color that indicates the flavors have melded.

Shredding and finishing

  1. Cook and serve
Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is tender. Verify the internal temperature reaches 165°F (74°C). Shred the chicken directly in the pot using two forks, allowing it to soak up the juices, and let it rest for 5 minutes before serving.
Look for The chicken pulls apart easily with a fork and is thoroughly coated in the glossy red sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Shredding the chicken while it is still warm in the slow cooker helps it absorb the remaining sauce.

The final stage involves transforming the cooked chicken thighs into a shredded, succulent mixture. Use two forks to pull the meat apart; it should yield easily. As you shred, the meat will naturally soak up the remaining sauce in the slow cooker. The final result should look glossy and vibrant. Check the temperature one last time to confirm it meets the safety standard of 165°F (74°C) before allowing it to rest briefly before serving.

Common mistakes

Avoid lifting the lid too frequently during the cooking process, as this releases heat and moisture, significantly increasing the total cooking time and potentially drying out the chicken. Another common mistake is failing to verify the internal temperature, which can lead to undercooked poultry.

Do not overfill the slow cooker, as this prevents the ingredients from cooking evenly. Finally, ensure the chicken is not left sitting in the slow cooker on the warm setting for more than two hours after it has finished cooking to maintain optimal food safety standards.

How to tell it’s done

The chicken is perfectly done when it is fork-tender and pulls apart with very little resistance. Using a digital meat thermometer, check the thickest part of the chicken to ensure it has reached an internal temperature of at least 165°F (74°C).

The sauce should be glossy and reduced slightly, clinging to the shredded meat. If the chicken still feels tough or resists shredding, continue cooking for another 30 minutes on high heat and check again. Let the shredded chicken rest for 5 minutes to allow the juices to redistribute properly.

  • Poultry: 165°F (74°C) in the thickest part
