Before you start

Before beginning, ensure your slow cooker is clean and positioned on a stable, heat-resistant surface. Have all your ingredients measured and ready to go.

Since you are using frozen ingredients, there is no thawing required, which saves significant time. Keep your serving plates nearby so you are prepared to plate the food as soon as it reaches the safe internal temperature.

Ingredients at a glance (4)
  • 2 lb frozen meatballs
  • 2 cups bell pepper chunks
  • 1 cup pineapple chunks
  • 18 oz sweet and sour sauce

Instructions

Initial Preparation

  1. Assemble the ingredients
Place the frozen meatballs into the slow cooker insert. Scatter the bell pepper chunks over the meatballs evenly to ensure they cook through during the slow cooking process.
Look for The slow cooker should be filled with an even layer of meatballs and peppers.
Tip Using uniform chunks of bell peppers helps them cook at the same rate as the meatballs.

The meatballs and peppers should be arranged in an even layer at the bottom of the slow cooker, ready to receive the remaining ingredients. Ensure the slow cooker is plugged in and ready to start once the ingredients are fully assembled.

Adding Sauce

  1. Add pineapple and sauce
Sprinkle the pineapple chunks over the peppers and meatballs. Pour the sweet and sour sauce over the entire mixture until everything is well coated.
Look for Ensure the sauce covers the ingredients completely.
Tip Pouring the sauce slowly helps it reach the bottom of the slow cooker.

The pineapple and sauce should be distributed evenly over the meatballs. At this stage, the slow cooker should be covered and the heat source activated. Verify that the lid is sealed tightly to begin the slow cooking process.

Cooking and Finishing

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours until the meatballs reach an internal temperature of 160°F (71°C). Serve hot immediately on a clean plate.
Look for The sauce should be thick, glossy, and bubbling throughout the slow cooker.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Avoid lifting the lid frequently as this releases heat and increases cooking time.

After the required time, the meatballs should be fully cooked, the sauce thickened, and the vegetables tender. Check the internal temperature of the meatballs before serving to ensure they have reached the required 160°F (71°C) for food safety.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from circulating properly. Ensure you have enough space for the sauce to reach all the meatballs.

Another error is checking the food too frequently; opening the lid lets heat escape, which can drastically increase the cooking time and lead to unevenly cooked meatballs.

Always trust the timing and only open the lid when you are ready to check for doneness near the end.

How to tell it’s done

The meatballs are finished when they are heated through and reach an internal temperature of 160°F (71°C). The sauce should appear thick and glossy, coating the meatballs and vegetables evenly.

The peppers should be tender yet still maintain some structure, while the pineapple should be soft and fragrant. Use a meat thermometer to verify the temperature in the center of the largest meatball.

  • Ground meat: 160°F (71°C) in the thickest part
