Before you start
Before beginning, ensure the slow cooker is clean and placed on a flat, heat-resistant surface. Prepare the ingredients by chopping the walnuts into uniform pieces and measuring out the raisins and apple juice.
Wash the apples thoroughly under cold running water and pat them dry. Have a small paring knife or apple corer ready to remove the seeds and stems, being careful to leave the base of the apple intact so the filling does not leak into the cooking liquid.
Ingredients at a glance (5)
- 4 apples, cored
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
- 2 tbsp butter, cut into small pats
- 1/4 cup apple juice
Instructions
Stuffing the fruit
- Prepare and stuff the applesCore the apples carefully, ensuring you do not pierce through the bottom so the juices stay inside. Place the apples upright in the bottom of the slow cooker. Fill the center of each apple with an equal portion of chopped walnuts and raisins.Look for Apples should sit flat and stable in the base of the slow cooker.Tip Using a dedicated apple corer makes this process much cleaner and faster.
At the end of this phase, the apples should be standing upright in the slow cooker with the walnut and raisin mixture securely packed into the center of each. The apples should look stable and ready for the liquid and butter additions.
Adding liquid and butter
- Add topping and liquidPlace the pats of butter on top of the fruit filling in each apple. Pour the apple juice into the bottom of the slow cooker, surrounding the apples. This liquid will help steam the fruit and create a flavorful syrup as it cooks.Look for Ensure the liquid is distributed evenly around the base of the apples.Tip Do not pour the juice directly over the apples, as you want to keep the butter and nut topping in place.
The apples should now have a pat of butter resting atop the filling, and the apple juice should be pooled at the base of the slow cooker, covering the bottom of the pot but not submerging the apples themselves.
Slow cooking
- Slow cook and serveCover the slow cooker with its lid. Cook on low for 3 hours or until the apples are fork-tender but still hold their shape. Once finished, carefully lift the apples out and serve warm, drizzling some of the cooking syrup from the pot over each serving.Look for The apples should be soft and easily pierced with a fork without collapsing.Tip Monitor the apples during the last hour of cooking to prevent them from becoming too mushy.
After the cooking time, the apples should appear tender, glistening, and slightly caramelized. The liquid in the bottom of the pot will have thickened slightly into a sweet syrup that smells warm, fruity, and fragrant.
Common mistakes
A common mistake is removing too much of the apple flesh during the coring process, which can cause the fruit to fall apart during cooking. Aim to remove only the core and seeds.
Another error is using too much liquid; you only need enough to cover the base of the slow cooker to prevent scorching, as the apples will release their own juices during the process.
Avoid lifting the lid too frequently, as this releases the trapped steam and heat necessary for even cooking.
How to tell it’s done
The apples are finished cooking when they are fork-tender and yield easily to light pressure, yet they should still maintain their structural integrity. The skin will look slightly wrinkled and glossy from the cooking liquid.
If you prefer a softer texture, you can extend the cooking time by an additional thirty minutes, but monitor them closely to ensure they do not collapse. The internal temperature of the fruit itself is not a safety concern, but the dish should be steaming hot throughout.
