Tips for success
To take this dish to the next level, consider toasted sesame seeds or sliced green onions as an additional layer of texture and flavor alongside the parsley. The mild bite of green onions cuts through the rich, fatty nature of the beef beautifully.
Additionally, if you prefer an even thicker glaze, you can whisk a teaspoon of cornstarch with a tablespoon of cold water and stir it into the simmering sauce during the reduction step. This creates an ultra-glossy, restaurant-style coating that adheres perfectly to the meat.
If you find the sauce too sweet, you can easily balance the flavors by adding a splash of rice vinegar or apple cider vinegar to the glaze mixture before cooking. The subtle acidity cuts through the sweetness of the brown sugar and the richness of the beef, creating a more balanced flavor profile.
For a hint of warmth, a pinch of crushed red pepper flakes or a dash of hot sauce can be added to the glaze without overpowering the main garlic and soy elements.
Variations
- Spicy Garlic Ribs: Add a tablespoon of sriracha or red pepper flakes to the glaze for a spicy kick.
- Honey Ginger Ribs: Substitute honey for brown sugar and add fresh grated ginger to the glaze.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze the ribs in a freezer-safe container with the sauce for up to 3 months. Thaw in the fridge overnight.
- Reheat
- Reheat gently in a covered baking dish at 325°F (160°C) for 15-20 minutes, adding a splash of water if needed.
Allow any leftover short ribs and glaze to cool completely at room temperature for no more than two hours before storing. Place the ribs and the remaining sticky sauce together in an airtight container to keep the meat from drying out.
Leftovers can be safely stored in the refrigerator for up to three to four days. The flavors will continue to develop and deepen as the ribs sit in the rich glaze, making the leftovers taste even better the next day.
This recipe is highly suitable for making ahead of time. You can fully cook the ribs and reduce the glaze a day in advance, then store them together in the refrigerator.
When ready to serve, simply reheat the ribs in the oven or back in the slow cooker until warmed through. This make-ahead method actually makes it easier to skim off any hardened fat from the surface of the sauce before reheating, resulting in a cleaner, less greasy glaze.
Serving ideas
Serve these sticky garlic short ribs hot, piled high on a large serving platter with plenty of extra glaze spooned over the top. They pair exceptionally well with a bed of fluffy jasmine rice, which acts as a perfect sponge for the sweet and savory garlic-soy sauce. For a delicious alternative, a creamy cauliflower mash or garlic mashed potatoes provides a comforting, velvety base that complements the ultra-tender texture of the beef.
To balance the rich, heavy nature of the short ribs, serve them alongside a crisp, refreshing side dish. A simple cucumber salad tossed in rice vinegar, a bright sesame slaw, or steamed baby bok choy provides a clean, vibrant contrast that cleanses the palate between rich bites. Make sure to serve the dish with plenty of napkins, as the sticky, caramelized glaze is delightfully messy and best enjoyed to the very last bite.

Slow Cooker Sticky Garlic Short Ribs with Rich Soy Glaze

Ingredients
- 3 lb bone-in beef short ribs
- 1 cup sweet garlic-soy glaze (store-bought or made ahead)
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Heat a large skillet over medium-high heat. Add the bone-in beef short ribs to the hot, dry skillet and sear them for about 2 to 3 minutes per side. Ensure all sides develop a deep, golden-brown crust to lock in the juices before transferring them to the slow cooker.
- Pour the sweet garlic-soy glaze evenly over the seared beef short ribs inside the slow cooker. Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the meat is incredibly tender.
- Carefully transfer the cooked ribs to a platter and cover with foil. Pour the remaining liquid from the slow cooker into a saucepan and simmer over medium heat for 10 minutes until it reduces into a thick, sticky glaze.
- Brush the thick, sticky garlic-soy glaze generously back over the ribs. Ensure the internal temperature of the beef reaches at least 145°F (63°C) and let the meat rest for at least 3 minutes before serving. Garnish the finished ribs with the chopped fresh parsley.
