Tips for success
For the smoothest queso, always cube the cheese yourself instead of buying pre-shredded. The anti-caking agents in pre-shredded cheese can make the dip grainy.
Let the cream cheese come to room temperature before adding it, as this helps it melt more quickly and evenly. If you want a smoother texture, you can puree the mango salsa before adding it, but the chunky version gives a nice texture.
When handling habaneros, wear disposable gloves and avoid touching your face. Remove the seeds and white membranes for a milder heat. If you are sensitive to spice, start with half a habanero and taste before adding more.
The heat will intensify as the queso sits, so keep that in mind. To mellow the spice, stir in a little extra cream cheese or a splash of milk.
Variations
- Milder Version: For a family-friendly dip, replace the habanero with one finely minced jalapeño (seeds removed). The mango and cheese flavors shine through without the intense heat, while still offering a gentle warmth.
- Smoky Twist: Add 1/2 teaspoon of smoked paprika and 1/4 teaspoon of ground cumin to the slow cooker along with the other ingredients. The smoky notes complement the sweet mango and spicy habanero beautifully.
- Extra Creamy: Stir in 1/2 cup of shredded Monterey Jack cheese during the final stirring step. This adds extra creaminess and a milder, buttery flavor that balances the heat.
- Veggie-Packed: Fold in 1/2 cup of finely diced red bell pepper and 1/4 cup of chopped fresh cilantro just before serving. The crunch and freshness brighten the dip and add color.
Storage and make-ahead
- Fridge
- Store leftover queso in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freezing is not recommended as the dairy-based dip may separate and become grainy upon thawing. For best quality, enjoy fresh or refrigerate.
- Reheat
- Reheat leftover queso in a saucepan over low heat, stirring constantly, or in the microwave in 30-second bursts, stirring between each.
Store leftover queso in an airtight container in the refrigerator for up to 4 days. The dip will thicken as it cools, which is normal. To reheat, place it in a saucepan over low heat, stirring frequently, or microwave in 30-second intervals, stirring between each.
Add a splash of evaporated milk or milk to restore the creamy texture. Do not leave the queso at room temperature for more than 2 hours.
This queso can be made a day ahead. Prepare the recipe as directed, then let it cool completely, cover, and refrigerate. To serve, reheat gently on the stovetop or in a slow cooker on LOW, stirring occasionally.
You may need to add a little evaporated milk to bring back the silky texture. The flavors will actually meld and deepen overnight, making it even more delicious the next day.
Serving ideas
Serve the queso warm, straight from the slow cooker, with lime tortilla chips for dipping. The chips add a salty, crunchy contrast to the creamy, spicy dip. For a heartier spread, offer additional dippers like fresh vegetables, toasted baguette slices, or even soft pretzels. The queso also works as a topping for nachos, tacos, or baked potatoes.
For a party, keep the slow cooker on WARM so the queso stays perfectly dippable throughout the event. Stir occasionally to prevent a skin from forming on top. If the dip thickens, stir in a splash of evaporated milk. Garnish with fresh cilantro or diced mango for a pop of color, though this is optional. The queso is best enjoyed fresh, but leftovers reheat well.

Slow-Cooker Spicy Pepper Jack Mango Habanero Queso Dip

Ingredients
- 24 oz Pepper Jack cheese, cubed
- 8 oz cream cheese, softened and cubed
- 1 1/2 cups fresh diced mango salsa
- 1 habanero pepper, finely minced
- 1/2 cup evaporated milk
- lime tortilla chips, for serving
Instructions
- Place the cubed Pepper Jack cheese in the slow cooker insert. Add the softened cream cheese, cubed, on top. Spoon the fresh diced mango salsa over the cheeses, then sprinkle the minced habanero pepper evenly over the top. Pour the evaporated milk over everything. Do not stir yet; layering helps the cheeses melt evenly.
- Cover the slow cooker with its lid. Set the slow cooker to LOW. Cook for 90 minutes without lifting the lid for the first hour, allowing the cheeses to melt slowly and the flavors to meld. The mixture will look separated and lumpy at first, but that is normal.
- After 90 minutes, remove the lid. Stir the queso gently with a rubber spatula, scraping the bottom and sides of the slow cooker. Continue stirring until the mixture is completely smooth, glossy, and all the cheese is fully melted. The mango salsa pieces should be evenly distributed throughout the dip.
- Taste a small spoonful of the queso (careful, it is hot) to check the level of spiciness. The habanero should provide a noticeable kick that builds gradually. If more heat is desired, let the queso sit on LOW for another 10 minutes, then stir again. If it is too spicy, stir in a little extra cream cheese to mellow it.
- Turn the slow cooker to the WARM setting. Serve the queso directly from the slow cooker, with lime tortilla chips alongside for dipping. The dip will stay smooth and dippable for up to 2 hours on WARM, but stir occasionally and add a splash of evaporated milk if it thickens.
