Tips for success
For the most tender meat, always cook on LOW if time allows. The longer cooking time breaks down collagen more thoroughly, resulting in melt-in-your-mouth texture.
If you're in a hurry, HIGH works, but check for tenderness early. Also, don't lift the lid during cooking — each time you do, heat escapes and adds to the cooking time.
To thicken the sauce further, you can remove the ribs and simmer the sauce on the stovetop for a few minutes, or mix a tablespoon of cornstarch with water and stir it in.
However, the sauce is usually thick enough after cooking. If you prefer a smoother sauce, use jellied cranberry sauce instead of whole berry.
Variations
- Spicy Cranberry Ribs: Add 1/2 teaspoon of red pepper flakes or a minced chipotle pepper in adobo sauce to the cranberry sauce for a spicy kick. The heat balances the sweetness beautifully.
- Orange-Cranberry Ribs: Stir in 1 tablespoon of orange zest and 1/4 cup of orange juice with the cranberry sauce. The citrus brightens the flavor and complements the cranberries.
- BBQ Cranberry Ribs: Replace half of the cranberry sauce with your favorite barbecue sauce. This creates a smoky, tangy glaze that is irresistible.
- Herbed Cranberry Ribs: Add 1 teaspoon of dried thyme or rosemary to the seasonings. The herbs add an earthy note that pairs well with the pork and cranberries.

Slow-Cooker Cranberry Country-Style Ribs

Ingredients
- 3 lb boneless country-style pork ribs
- 1/4 cup packed brown sugar
- 1 oz packet dry onion soup mix
- 1 can (14 oz) whole berry cranberry sauce
Instructions
- Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer as much as possible. If the ribs are very thick, you can cut them into smaller pieces so they fit evenly.
- Sprinkle the packed brown sugar evenly over the ribs, then sprinkle the dry onion soup mix over the top. Use your hands or a spoon to rub the seasonings into the meat so every surface is coated.
- Spoon the whole berry cranberry sauce over the seasoned ribs, spreading it out to cover as much of the meat as possible. Do not stir — the sauce will melt and combine as it cooks.
- Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the ribs are fork-tender and easily pull apart. The internal temperature should reach at least 145°F (63°C) for safety, but the meat will be far more tender. Let it rest for 3 minutes before slicing.
- Once the ribs are tender, turn off the slow cooker and let the meat rest in the sauce for 10 minutes. This allows the juices to redistribute and the sauce to thicken slightly.
- Using tongs, carefully transfer the ribs to a serving platter. Spoon the cranberry sauce from the slow cooker over the top. Serve hot over fluffy mashed potatoes, spooning extra sauce over everything.
