Tips for success
For the most tender beef, choose a well-marbled ribeye and cut it into uniform 1-inch cubes. If the cubes are too small, they can overcook; if too large, they may not tenderize fully.
Pat the beef dry before adding it to the slow cooker—this helps the sauce develop a deeper color and richer flavor. Avoid stirring during cooking, as that can break up the beef and cloud the sauce.
To thicken the sauce further, remove the lid during the last 15 to 20 minutes of cooking to let some moisture evaporate. If the sauce is too thick, stir in a splash of beef broth or water.
For an extra layer of flavor, add a teaspoon of Worcestershire sauce along with the gravy mix. Serve the dish hot, with plenty of sauce spooned over the noodles.
Variations
- Classic Beef Stroganoff: Swap the ribeye for 2 pounds of beef sirloin, cut into strips. Add 1 cup of sliced cremini mushrooms and 1/2 cup of diced onion. Use 2 tablespoons of tomato paste along with the gravy mix for a deeper flavor.
- Chicken and Mushroom Version: Use 2 pounds of boneless, skinless chicken thighs instead of beef. Cook on LOW for 4 to 5 hours until the chicken is tender and reaches 165°F (74°C). Serve over egg noodles or rice.
- Vegetarian Mushroom Stroganoff: Omit the beef and double the mushrooms to 2 pounds. Add 1 cup of vegetable broth and 2 tablespoons of soy sauce for umami. Cook on LOW for 3 to 4 hours until the mushrooms are tender. The sauce will be lighter but still creamy.
- Creamy Dijon Version: Stir 1 tablespoon of Dijon mustard into the sour cream before adding it to the slow cooker. The mustard adds a subtle tang that brightens the rich gravy. Garnish with fresh thyme before serving.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze the cooked beef and gravy (without noodles) in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, and the sauce may thicken as it cools.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water to loosen the sauce if needed. The noodles are best stored separately to avoid sogginess.
The beef, mushrooms, and shallots can be prepped a day in advance and stored in the refrigerator in separate containers. Assemble the slow cooker in the morning and cook as directed.
The fully cooked dish can also be made ahead and reheated, though the texture of the beef is best when served fresh. Leftovers keep well in the fridge for up to 3 days.
Serving ideas
Serve this dish over a generous pile of buttered egg noodles, letting the gravy soak into every strand. The creamy sauce also pairs beautifully with mashed potatoes, rice, or crusty bread for dipping. A simple green salad with a tangy vinaigrette balances the richness of the beef and gravy.
For a family-style meal, set the slow cooker on the table and let everyone serve themselves. Garnish with fresh parsley or chives if desired, though the dish is delicious as is. The leftovers are even better the next day, as the flavors meld overnight. This is comfort food at its most satisfying.

Slow Cooker Sour Cream Portobello Ribeye Bites

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 1 lb portobello mushrooms, thickly sliced
- 6 shallots, peeled and left whole
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 12 oz wide egg noodles, cooked and buttered
Instructions
- Place the cubed ribeye bites in the bottom of a 6-quart slow cooker in an even layer. Scatter the thickly sliced portobello mushrooms and the peeled whole shallots over the beef. Dollop the sour cream over the top, then sprinkle the brown gravy mix evenly over everything. Do not stir.
- Cover the slow cooker with the lid. Cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender. The sauce will darken and become velvety as the sour cream and gravy mix meld with the meat juices. Let it rest for 3 minutes before slicing.
- After the minimum cooking time, check the beef by piercing a cube with a fork. It should be very tender and easily pull apart. If not, continue cooking for another 30 minutes and check again. The internal temperature should reach at least 145°F (63°C). Let it rest for 3 minutes before slicing.
- Once the beef is tender, turn off the slow cooker and let the meat rest in the warm sauce for at least 3 minutes before serving. This allows the juices to redistribute and keeps the bites succulent.
- While the beef rests, cook the wide egg noodles according to the package directions in a large pot of salted boiling water until al dente. Drain well and toss with butter to coat.
- Spoon the warm buttered noodles onto plates or into shallow bowls. Ladle the ribeye bites, mushrooms, shallots, and plenty of the velvety sour cream gravy over the top. Serve immediately.
