Tips for success
For the best texture, cut the ribeye into uniform cubes and avoid overcrowding the slow cooker. If you have time, sear the beef in a hot skillet before adding it to the slow cooker—this adds a deeper flavor.
Use full-fat sour cream for the creamiest gravy, and don't skip the rest time after cooking.
To thicken the gravy further, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the sauce during the last 30 minutes of cooking.
If you prefer a thinner gravy, add a splash of beef broth before serving. Leftovers can be stored in the refrigerator for up to 4 days.
Variations
- Mushroom version: Add 8 oz of sliced cremini mushrooms along with the peppers for an earthy flavor. Sauté them briefly in butter before adding to the slow cooker to deepen their taste.
- Spicy kick: Add 1-2 finely chopped jalapeños or a teaspoon of red pepper flakes with the peppers for a spicy version. Adjust the amount to taste.
- Beef stroganoff style: Stir in 1 teaspoon of Dijon mustard and 1 tablespoon of Worcestershire sauce with the sour cream for a tangier, more complex sauce.
- Low-carb option: Skip the noodles and serve over cauliflower rice or steamed broccoli. The gravy is thick enough to coat vegetables without being too heavy.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to restore the sauce's consistency.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring frequently, until heated through. Add a splash of beef broth or water if the gravy is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The beef and gravy will keep well, and the flavors will continue to meld.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the gravy has thickened too much.
This dish can be assembled the night before. Place all the raw ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook on low as directed. The cooking time may need to be extended by 30 minutes to account for the chilled ingredients.
Serving ideas
Serve the beef and pepper mixture over warm buttered egg noodles, with the gravy spooned generously over the top. A side of crusty bread or a simple green salad completes the meal. The dish is rich and satisfying, so pair it with a light vegetable or a crisp white wine.
For a low-carb option, serve over cauliflower rice or mashed potatoes instead of noodles. The gravy is also delicious over rice or polenta. Garnish with fresh parsley or chives for a pop of color, if desired. This is a versatile dish that can be dressed up or down.

Slow Cooker Sour Cream Pepper Ribeye Bites

Ingredients
- 2 lb well-marbled ribeye steak, cut into 1-inch cubes
- 2 bell peppers (red and green), sliced into thick strips
- 1 red onion, cut into wedges
- 1 cup sour cream
- 1 oz brown gravy mix (1 packet)
- 8 oz wide egg noodles, cooked and tossed with butter
- Salt, to taste
- Black pepper, to taste
Instructions
- Place the cubed ribeye bites in the bottom of a 6-quart slow cooker in an even layer. Scatter the sliced bell peppers and red onion wedges over the beef.
- Dollop the sour cream over the top of the beef and vegetables. Sprinkle the brown gravy mix evenly over everything. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the beef is fork-tender and the peppers are soft. The sauce will darken and become velvety. Let it rest for 3 minutes before slicing.
- After cooking, check that the beef has reached an internal temperature of 145°F (63°C). Let the beef rest for at least 3 minutes before serving to allow the juices to redistribute.
- Stir the mixture gently to combine the gravy. Season with salt and black pepper to taste. Serve the beef and pepper mixture over warm buttered egg noodles.
