Before you start

Before beginning, ensure your slow cooker is clean and positioned on a stable, heat-resistant surface. Wash the bell peppers and onions thoroughly under cool running water and pat them dry.

Carefully slice the peppers into strips and the onions into even slices, keeping them roughly the same size to ensure they cook at a consistent rate. Prepare your measuring tools and have the brown gravy ready to pour, ensuring the kitchen is organized before you start the assembly process.

Ingredients at a glance (5)
  • 8 skinless bone-in chicken drumsticks
  • 2 cups green bell pepper strips
  • 1 cup yellow onion slices
  • 1 tsp paprika
  • 1 1/2 cups brown gravy

Instructions

Preparing the ingredients

  1. Assemble the slow cooker
Place the raw skinless bone-in chicken drumsticks into the bottom of the slow cooker insert. Layer the green bell pepper strips and yellow onion slices evenly over the chicken pieces.
Look for ensure the chicken is arranged in a single layer if possible for even cooking
Tip trim any excess fat from the drumsticks before placing them in the cooker

At the end of this phase, the chicken, peppers, and onions should be neatly layered in the slow cooker insert. The peppers and onions should be evenly distributed to maximize flavor contact with the chicken.

Check that the ingredients are not piled too high, which could impede the lid from closing securely, and ensure the slow cooker base is ready to be turned on.

Seasoning and gravy

  1. Season and add gravy
Sprinkle the paprika over the vegetables and chicken. Pour the brown gravy over the entire mixture, ensuring the ingredients are well-coated and the gravy settles around the drumsticks.
Look for the gravy should partially submerge the chicken to keep it moist during the long cooking process
Tip use a spatula to help distribute the gravy if it is very thick

Once the paprika is sprinkled and the gravy is poured, the dish should look uniform. The gravy should be poured evenly over the top, ensuring it trickles down between the chicken and vegetables. At this point, double-check that no ingredients are stuck to the sides of the insert, which could burn during the long cooking cycle, and seal the lid tightly.

Slow cooking

  1. Cook and serve
Cover the slow cooker and cook on low heat for 5 to 6 hours or on high heat for 3 hours, until the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving alongside the vegetables and gravy.
Look for the chicken should be very tender and easily pull away from the bone
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip check the temperature at the thickest part of the drumstick to ensure it is fully cooked

During the final phase, the kitchen will begin to smell savory and rich. The chicken should be soft, and the gravy should have thickened slightly as it combined with the juices from the meat and vegetables. Before serving, verify the internal temperature of the chicken and ensure the vegetables are tender and fully incorporated into the sauce.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the chicken from cooking evenly. Another error is lifting the lid too frequently during the cooking process; every time the lid is opened, heat escapes, extending the total cooking time significantly.

Additionally, ensure that you do not use frozen chicken, as this can lead to uneven cooking and potential food safety issues. Always start with fully thawed, room-temperature chicken for the best results.

How to tell it’s done

The chicken is done when it is tender, moist, and reaches a minimum internal temperature of 165°F (74°C) when measured with a meat thermometer at the thickest part of the drumstick.

The meat should pull away from the bone with minimal resistance, and the gravy should be thick and flavorful. Always verify the temperature before serving to ensure food safety and optimal texture.

  • Poultry: 165°F (74°C) in the thickest part
