Tips for success

For the best flavor, use a good-quality smoked paprika—it makes a real difference. If you have time, sear the chicken thighs in a skillet before adding them to the slow cooker for extra color and a deeper flavor, though this is optional.

You can also add a bay leaf or a few sprigs of fresh thyme to the slow cooker for additional aroma, but the recipe is delicious as written.

The cabbage will release liquid as it cooks, so don’t worry if the slow cooker seems full at the start.

If you prefer a thicker sauce, you can remove the chicken and cabbage at the end and simmer the broth on the stovetop for a few minutes to reduce it. Serve with crusty bread to soak up every last bit of the savory broth.

Variations

  • Add onions and carrots: Add sliced onions and carrot chunks to the slow cooker along with the cabbage for extra sweetness and color. The vegetables will cook down and become tender, adding more body to the broth.
  • Use drumsticks: Substitute chicken drumsticks for the thighs. They cook similarly and are just as flavorful. Adjust the cooking time if needed, checking that the internal temperature reaches 165°F (74°C).
  • Spicy kick: Add 1/2 teaspoon of cayenne pepper or red pepper flakes to the spice rub for a spicy version. The heat will mellow during cooking, leaving a pleasant warmth.
  • Herb-infused: Tuck a few sprigs of fresh thyme or rosemary into the slow cooker with the chicken and cabbage. The herbs will infuse the broth with their fragrance. Remove before serving.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave until warmed through.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a covered saucepan over medium-low heat, adding a splash of broth or water if needed. Or microwave in 30-second bursts until hot.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day. Let leftovers cool completely, then keep them covered so they stay moist and full of flavor.

You can prep the ingredients the night before: cut the cabbage, mince the garlic, and mix the spice rub. Store them separately in the refrigerator, then assemble the slow cooker in the morning. This makes the recipe even easier on busy days.

Serving ideas

Serve the chicken and cabbage straight from the slow cooker, spooning some of the buttery broth over each portion.

This dish pairs beautifully with creamy mashed potatoes, rice, or a crusty loaf of bread to soak up the sauce. A simple green salad with a tangy vinaigrette would also brighten up the plate.

For a heartier meal, you can shred the chicken and mix it with the cabbage and broth to serve over egg noodles or polenta.

The leftovers are great in sandwiches or wraps, too. Garnish with fresh parsley or chives if you like, though the dish is delicious without any extra herbs.

Frequently asked questions

Can this recipe be made with boneless, skinless chicken thighs?
Yes, boneless, skinless thighs can be used, but reduce the cooking time to about 4 hours on low to prevent them from drying out. The skin and bones add flavor and moisture, so the result will be slightly different, but still delicious.
Why is the chicken skin not crispy?
Slow cookers create a moist environment, so the chicken skin becomes soft rather than crispy. For crispy skin, you can sear the thighs in a hot skillet before adding them to the slow cooker, or after cooking, place them under the broiler for a few minutes until crisp.
Can this recipe be cooked on high instead of low?
Yes, you can cook on high for about 3 to 4 hours, but the chicken may not be as tender and the cabbage might become mushy. Low and slow is recommended for the best texture and flavor.
What can be used instead of smoked paprika?
If smoked paprika is unavailable, use regular sweet paprika and add a few drops of liquid smoke or a pinch of chipotle powder to mimic the smoky flavor. The taste will be slightly different but still good.
How can the broth be thickened?
After removing the chicken and cabbage, transfer the broth to a saucepan and simmer over medium heat until reduced. Alternatively, mix a tablespoon of cornstarch with two tablespoons of cold water and stir into the hot broth, then simmer until thickened.

Slow Cooker Smoky Paprika Chicken Thighs with Melting Cabbage

Prep 15 minCook 6 hTotal 6 h 15 minServes 4
Slow cooker chicken thighs with smoky paprika and cabbage in a black stoneware insert.

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 small head green cabbage, cut into thick wedges
  • 2 tbsp smoked paprika
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 4 tbsp unsalted butter, melted
  • salt to taste
  • black pepper to taste

Instructions

  1. Place the chicken thighs skin side up in the slow cooker, fitting them snugly in a single layer. Nestle the cabbage wedges between the thighs, tucking them in so they are surrounded by the chicken.
  2. In a small bowl, mix the smoked paprika, minced garlic, salt, and black pepper. Sprinkle this mixture evenly over the chicken and cabbage, making sure to coat the exposed surfaces.
  3. Combine the chicken broth and melted butter in a measuring cup. Pour the mixture around the edges of the slow cooker, being careful not to wash the seasoning off the chicken skin.
  4. Cover the slow cooker and cook on low for 6 to 7 hours, until the chicken is cooked through and the cabbage is very tender. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  5. Using tongs, carefully transfer the chicken thighs and cabbage wedges to a serving platter. Spoon some of the buttery broth over the top. Serve immediately.
