Tips for success
For extra caramelization, after slow cooking, transfer the ribs to a baking sheet and broil for 2–3 minutes until the edges are charred and sticky.
Keep a close eye on them, as the sugar in the sauce can burn quickly. This step is optional but adds a nice smoky, grilled flavor.
To make the sauce even richer, skim the fat from the surface before serving. You can also strain the sauce and reduce it on the stovetop for a thicker, more concentrated glaze.
If you prefer a smoother sauce, puree the chipotle peppers before adding them.
Variations
- Smoky Bourbon Ribs: Replace the honey with 2 tablespoons of bourbon and add 1 tablespoon of brown sugar. Use a smoky BBQ sauce and reduce the chipotle to 1 tablespoon for a milder heat.
- Spicy Mango Ribs: Swap the honey for 1/4 cup of mango puree and add 1 teaspoon of ground ginger. Use a sweet BBQ sauce and keep the chipotle for a fruity-spicy kick.
- Pineapple Teriyaki Ribs: Replace the honey hickory BBQ sauce with teriyaki sauce, and add 1/2 cup of crushed pineapple. Omit the chipotle for a sweeter, Asian-inspired flavor.
- Coffee-Rubbed Ribs: Rub the ribs with 1 tablespoon of instant coffee powder and 1 teaspoon of smoked paprika before adding the chipotle and honey. Use a bold BBQ sauce to complement the coffee's bitterness.

The sauce will thicken as it cools; reheat gently in a covered pot or in the microwave, adding a splash of water or extra BBQ sauce if needed.
You can assemble the ribs in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. The cook time may be slightly longer since the ingredients start cold.
Serving ideas
These ribs are hearty enough to be the main event. Serve them with classic sides like coleslaw, cornbread, or baked beans. A crisp green salad with a tangy vinaigrette balances the richness of the ribs.
For a casual gathering, set out the ribs on a platter with extra sauce on the side. Let guests pull the meat off the bones themselves—it's part of the fun. Pair with cold beer or a sweet iced tea.

Slow-Cooker Smoky Chipotle Honey Hickory Baby Back Ribs

Ingredients
- 2 lb baby back pork ribs
- 2 tbsp chipotle peppers in adobo sauce, chopped
- 1/4 cup raw honey
- 1 cup honey hickory barbecue sauce
Instructions
- Place the baby back ribs in the slow cooker, meaty side up, overlapping slightly if needed. They will shrink as they cook, so don't worry about fitting them perfectly.
- Spoon the chopped chipotle peppers evenly over the ribs, then drizzle with the raw honey. Use a spoon or your fingers to spread the chipotle and honey across the surface, coating as much as possible.
- Pour the honey hickory barbecue sauce over everything, using a spoon to spread it into an even layer. Make sure the tops of the ribs are well coated; the sauce will thin out as it cooks.
- Cover the slow cooker and cook on low for 6 to 8 hours, until the meat is fork-tender and easily pulls away from the bone. Do not open the lid during cooking unless necessary, as this releases heat and extends the cooking time. Let it rest for 3 minutes before slicing.
- Test the ribs by inserting a fork into the thickest part of the meat. The fork should slide in easily, and the meat should be tender enough to twist off the bone. If using a meat thermometer, the internal temperature should read at least 145°F (63°C) — but for fall-off-the-bone texture, it will be much higher. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes. This allows the juices to redistribute and the glaze to thicken slightly.
- Using tongs or a fork, carefully lift the ribs out of the slow cooker and transfer them to a serving plate. Spoon some of the sauce from the slow cooker over the top. Serve hot, with extra sauce on the side if desired.
