Before you start

Before starting, ensure the slow cooker insert is clean and properly seated in the base. Take the ribs out of the refrigerator about 20 minutes before beginning the cooking process to take the chill off the meat, which helps with more even cooking.

Prepare the chipotles by finely mincing them, and measure out the barbecue sauce and garlic powder so that everything is ready to go. Having all ingredients prepped and organized allows for a seamless assembly process, preventing any unnecessary delays once the cooking has begun.

Ingredients at a glance (4)
  • 2 lb baby back ribs, cut into smaller pieces
  • 2 tbsp minced chipotles in adobo
  • 1 tsp garlic powder
  • 1 1/2 cups barbecue sauce

Instructions

Assembly of ingredients

  1. Prepare the ribs
Place the pork rib pieces into the bottom of the slow cooker insert. Ensure they are arranged in an even layer to promote consistent cooking throughout the process.
Look for Ribs are placed in the bottom of the cooker.
Tip Removing the membrane from the back of the ribs before cooking will result in a more tender texture.

At the end of this phase, the ribs should be arranged neatly at the bottom of the slow cooker, ready to be seasoned. Ensure the ribs are not piled too high in the center, which helps the heat distribute evenly.

The ingredients should be layered evenly, with the chipotles and garlic powder applied directly to the meat before the barbecue sauce is poured over the top to create a flavorful braising liquid.

Slow cooking process

  1. Add aromatics and sauce
Distribute the minced chipotles over the ribs. Sprinkle the garlic powder evenly across the meat, then pour the barbecue sauce over everything, making sure each piece is well-coated.
Look for Ingredients are added in quick succession.
Tip Use a silicone spatula to scrape all the sauce from the measuring cup to ensure no flavor is left behind.

During the long cook time, the kitchen should begin to smell savory and smoky as the chipotles and garlic infuse the meat. The sauce will gradually thin as it mixes with the natural juices released by the ribs, creating a bubbling, aromatic liquid. By the end of this phase, the meat should look significantly darker and appear to have pulled slightly away from the ends of the bones.

Resting and serving

  1. Slow cook and serve
Cover and cook on low for 8 hours. Once finished, ensure the meat reaches an internal temperature of 145°F (63°C). Let the ribs rest for 10 minutes before serving on a platter.
Look for The sauce is glossy and the meat is tender.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip The ribs will be very delicate, so use tongs to transfer them to the serving plate carefully.

Once the cooking is complete, the ribs should be exceptionally tender and coated in a thick, glossy glaze. After the required 10-minute resting period, the ribs should be stable enough to move to a plate without falling apart completely. The final result should be a beautiful, glistening dish that is ready to be portioned and enjoyed, with the sauce having reduced into a rich, concentrated topping.

Common mistakes

A common mistake is overcrowding the slow cooker. Ensure the ribs are placed in an even layer to allow the heat and sauce to circulate. Another error is checking the ribs too frequently.

Opening the lid releases steam and heat, which significantly increases the cooking time and can lead to uneven results. Finally, avoid using a sauce that is overly acidic or thin, as it may not cling to the ribs properly. Stick to a standard, thick barbecue sauce for the best results.

How to tell it’s done

The ribs are done when the meat is extremely tender and pulls away easily from the bone with a fork. Using a meat thermometer, ensure the thickest part of the meat reaches an internal temperature of at least 145°F (63°C).

Because slow cookers can vary in intensity, check the texture after 7 hours; the meat should be soft and yielding, not tough or chewy. Always allow the meat to rest for at least 10 minutes before serving to ensure the juices redistribute throughout the fibers for the best texture.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
