Before you start

Before starting, ensure the work surface is clean and all ingredients are measured. Rinse the green beans thoroughly under cold water and trim the ends. Scrub the red potatoes well, then halve them into uniform sizes to ensure they cook at the same rate.

Place the slow cooker on a flat, stable counter near an electrical outlet. Have the chicken broth ready in a measuring cup. Keeping the workspace organized helps ensure a smooth assembly process before the long, unattended cooking phase begins.

Ingredients at a glance (6)
  • 2 lbs smoked turkey legs
  • 1 lb fresh green beans, trimmed
  • 1 lb red potatoes, halved
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 2 cups chicken broth

Instructions

Assembly of Ingredients

  1. Prepare the Slow Cooker
Place the smoked turkey legs into the base of the slow cooker. Arrange the trimmed green beans and the halved red potatoes evenly around the turkey legs, ensuring they are distributed well for even cooking throughout the process.
Look for Turkey legs are settled at the bottom with vegetables surrounding them.
Tip Ensure the vegetables are not packed too tightly to allow the broth to circulate.

The ingredients should be layered carefully in the slow cooker. The turkey legs must be at the bottom, with the green beans and red potatoes arranged around them. The arrangement should be loose to ensure even heat distribution. Check that all ingredients are fresh and that the potatoes are cut to a uniform size before moving to the seasoning step.

Seasoning and Liquid Addition

  1. Season and Add Liquid
Sprinkle the onion powder and black pepper evenly over the turkey, green beans, and potatoes. Carefully pour the chicken broth into the slow cooker, moving around the edges to moisten all the ingredients without washing away the seasonings.
Look for Broth pools at the bottom of the crock, partially submerging the vegetables.
Tip Use a low-sodium broth if you prefer to control the saltiness of the final dish.

The onion powder and black pepper should be distributed evenly over all ingredients. When pouring the broth, ensure it reaches the bottom of the crock without displacing the seasonings too much.

The liquid level should be visible but not covering the top ingredients entirely. This ensures the vegetables steam in the flavorful broth throughout the cooking cycle.

Slow Cooking

  1. Slow Cook and Finish
Cover the slow cooker with the lid. Cook on low for 6 hours until the turkey is tender and pulls easily from the bone, and the potatoes are fork-tender. Once finished, ensure the turkey reaches an internal temperature of 165°F (74°C). Let it rest for 5 minutes before serving.
Look for Meat pulls away from the bone and potatoes are easily pierced with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the turkey is not quite tender, cook for an additional 30 minutes on low.

After the long cooking duration, check that the turkey is fully tender and the potatoes are cooked through. The kitchen should smell savory and smoky. Verify the internal temperature of the turkey reaches 165°F (74°C). Once done, allow the dish to rest briefly before serving to allow the flavors to settle and the broth to thicken slightly.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the broth from circulating and lead to unevenly cooked vegetables. Ensure the ingredients are arranged loosely. Another error is using too much liquid; the broth should only partially submerge the ingredients, as the vegetables will release their own moisture during the cooking process.

Finally, avoid lifting the lid frequently during the cooking time, as each time the lid is removed, heat escapes and the cooking time must be extended to compensate for the lost temperature.

How to tell it’s done

The dish is ready when the turkey meat is extremely tender and easily pulls away from the bone with a fork. The potatoes should be soft enough to be pierced easily with a fork, and the green beans should be tender but still retain their vibrant green color.

Before serving, verify that the turkey has reached a safe internal temperature of 165°F (74°C) by inserting a meat thermometer into the thickest part of the meat, avoiding the bone.

  • Poultry: 165°F (74°C) in the thickest part
