Tips for success
For the best flavor, use a good-quality smoked sausage with a pronounced smoky taste, such as andouille or kielbasa.
The lardons add an extra hit of porky richness, but you can skip them if you prefer a leaner dish. If you like a bit of heat, add a pinch of cayenne pepper or a chopped jalapeño along with the cumin.
To make this dish even heartier, serve it over steamed white rice or with crusty bread for dipping into the sauce. A sprinkle of fresh parsley or green onions adds a pop of color and freshness.
The leftovers taste even better the next day as the flavors continue to meld. You can also blend a portion of the beans to thicken the sauce further, if desired.
Variations
- Add vegetables: Sauté diced bell peppers, celery, and garlic with the onions before adding to the slow cooker. This adds sweetness and depth to the dish.
- Spicy version: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper along with the cumin for a smoky, spicy kick. Or stir in a chopped chipotle pepper in adobo.
- Use canned beans: Swap dried beans for 3 cans of red beans, drained and rinsed. Reduce the cooking time to 4 hours on low or 2 hours on high, as canned beans are already tender.
- Make it creamy: After cooking, mash some of the beans against the side of the slow cooker to thicken the sauce. Stir in a splash of cream or a pat of butter for extra richness.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days. The flavors deepen overnight.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over medium heat, adding a splash of water or broth to loosen the sauce. Or microwave in 1-minute intervals, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the mixture has thickened too much.
This dish is ideal for making ahead. Prepare the recipe as directed, then let it cool completely before refrigerating. It can be made up to 2 days in advance. Reheat gently on the stovetop or in the slow cooker on low until hot.
Serving ideas
Serve the smoked sausage and red beans hot, spooned into bowls. The dish is substantial enough to stand alone, but it pairs beautifully with rice, cornbread, or a simple green salad.
For a traditional touch, serve over white rice and garnish with sliced green onions or fresh parsley. The rich sauce is perfect for soaking up with crusty bread.
This is a forgiving dish that welcomes customization. For extra vegetables, add diced bell peppers or celery along with the onions.
A splash of hot sauce or a sprinkle of smoked paprika at the table adds a nice kick. Leftovers can be turned into a hearty soup by adding broth, or used as a filling for tacos or burritos.

- 4 oz lardons (or thick-cut bacon, chopped)
- 1 lb dried red beans, rinsed
- 1 large yellow onion, sliced
- 2 tsp ground cumin
- 2 cups tomato coulis (or crushed tomatoes)
Instructions
- Place the sliced smoked sausage and lardons in the bottom of the slow cooker. Scatter the rinsed red beans and sliced onions over the top, spreading them evenly.

- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beans are tender and the sausage is cooked through. Let it rest for 3 minutes before slicing.
- Once the beans are tender and the sausage is fully cooked, stir the mixture well. Serve hot, spooned into bowls with any extra cooking liquid.
