Before you start

Before starting, measure out all ingredients and have them ready to go. If using frozen hashbrowns, remove them from the freezer and let them sit at room temperature for 10 minutes to break apart easily.

Dice the ham into 1/2-inch cubes and cut the broccoli into small, bite-sized florets. Grate the cheeses if you're not using pre-shredded. No need to preheat the slow cooker—just plug it in and layer the ingredients directly in the insert.

Ingredients at a glance (6)
  • 2 lb shredded russet potato hashbrowns
  • 1 1/2 cups diced honey-glazed smoked ham
  • 2 cups fresh broccoli florets
  • 1 can (10.5 oz) condensed cream of broccoli soup
  • 2 cups shredded smoked gouda
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions

Layer and Prep

  1. Layer the Base
Place the shredded hashbrowns in the bottom of a 7-quart slow cooker. Spread them into an even layer. Scatter the diced ham over the hashbrowns, distributing it evenly. Then add the broccoli florets on top, spreading them out so they are distributed throughout the casserole.
Look for The hashbrowns should cover the bottom completely, with ham and broccoli scattered evenly.
Tip If using frozen hashbrowns, there is no need to thaw them first—just break up any clumps.
  2. Add the Soup
Spoon the condensed cream of broccoli soup over the top of the vegetable and ham mixture. Use a spatula or spoon to spread the soup gently, but do not stir the ingredients together. The soup will create a creamy sauce as it cooks.
Look for The soup should be spread over the top, leaving some areas of the vegetables exposed.
Tip For a thinner sauce, you can whisk the soup with 1/4 cup of milk or water before adding.
  3. Top with Cheeses
Sprinkle the shredded smoked gouda evenly over the soup layer. Then sprinkle the grated Parmigiano-Reggiano over the gouda. Do not stir. The cheeses will melt and form a golden, bubbly crust during cooking.
Look for The top should be completely covered with a layer of shredded cheese.
Tip Use freshly grated Parmesan for the best melting and flavor.

After layering the hashbrowns, ham, broccoli, soup, and cheeses, the slow cooker insert should be nearly full, with the cheese covering the top completely.

The ingredients should be arranged in distinct layers, not mixed. At this point, the dish looks vibrant and colorful, with the green broccoli peeking through the white soup and the golden cheese crowning it all.

Slow Cook to Tender

  1. Cook on Low
Cover the slow cooker with the lid and set it to cook on low heat. Cook for 4 to 5 hours, until the hashbrowns are tender and the cheese is melted and bubbly. Avoid opening the lid during cooking to keep the heat inside.
Look for After 4 hours, the edges will look bubbly and the cheese will be fully melted.
Tip Cooking on low gives the hashbrowns time to soften without becoming mushy.
  2. Check for Doneness
After 4 hours, check the casserole by inserting a fork into the center. The hashbrowns should be tender and easily pierced. If they are still firm, continue cooking for another 30 minutes and check again. The ham is already cooked, so it only needs to heat through. Let it rest for 3 minutes before slicing.
Look for The fork should slide through the hashbrowns with little resistance.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip The casserole is ready when the internal temperature reaches 145°F (63°C) for the ham.

After 4 to 5 hours on low, the casserole will be bubbling gently around the edges. The cheese will be fully melted and lightly browned in spots, and the aroma of smoked Gouda and ham will fill the kitchen. A fork inserted into the center should meet little resistance, and the sauce will have thickened to a velvety consistency.

Serve and Enjoy

  1. Serve the Casserole
Turn off the slow cooker. Using a large spoon, scoop the casserole onto plates or a serving platter. The texture should be creamy and spoonable, with the cheese pulling into strands. Serve hot, straight from the cooker.
Look for The casserole should hold its shape on the spoon but still be creamy and moist.
Tip For a crispier top, you can broil the casserole for 2-3 minutes after scooping it into an oven-safe dish.

When you scoop into the casserole, the spoon should glide through the tender potatoes and creamy sauce, lifting up long strands of melted cheese. The broccoli will be tender but still vibrant green, and the ham pieces will be juicy. Served hot, the casserole is glossy and steaming, with a rich, smoky smell that promises comfort in every bite.

Common mistakes

One common mistake is opening the slow cooker lid too often, which lets heat escape and extends the cooking time. Resist the urge to peek until the minimum cooking time has passed. Another pitfall is using regular diced potatoes instead of hashbrowns—they take much longer to cook and may remain crunchy.

Also, avoid overloading the slow cooker; if it's too full, the ingredients won't cook evenly. Finally, don't skip the cheese layer on top—it creates that irresistible golden crust.

How to tell it’s done

The casserole is done when the hashbrowns are tender and easily pierced with a fork, and the cheese is fully melted and bubbling around the edges. The internal temperature of the ham should reach 145°F (63°C) to ensure it's heated through.

The top will be golden in spots, and the sauce will be thick and creamy. If the casserole looks too loose, let it cook an additional 30 minutes uncovered to allow excess moisture to evaporate.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
