Before you start

Before you begin, ensure you have all your ingredients prepared and ready for assembly. Chop the smoked bacon into bite-sized pieces and slice your sausages if preferred, or leave them whole. Wash the savoy cabbage thoroughly and chop it into large, manageable chunks.

Peel and chop your chosen root vegetables into uniform sizes to ensure even cooking. Clear a space on your countertop for the slow cooker and ensure it is plugged in and ready to go. Having everything prepped in advance makes the assembly process fast and efficient.

Ingredients at a glance (6)
  • 8 oz smoked bacon, chopped
  • 4 fresh sausages
  • 1 small head savoy cabbage, chopped
  • 2 cups root vegetables, chopped
  • 1 beef bouillon cube, crumbled
  • 2 cups water

Instructions

Preparation and Layering

  1. Layering the Proteins
Begin by placing the chopped smoked bacon and the fresh sausages into the bottom of the slow cooker. Ensure they are evenly distributed to allow for uniform cooking during the long, gentle heating process.
Look for The bacon and sausages should cover the bottom of the slow cooker base.
Tip Ensure the sausages are fully thawed if previously frozen before adding them to the pot.

At this stage, the slow cooker is filled with layers of bacon, sausages, and fresh vegetables. Everything is arranged neatly, and the bouillon has been added. The ingredients should look vibrant and fresh, ready for the long, slow heat to transform them into a cohesive and flavorful meal.

Adding Liquid and Seasoning

  1. Adding Vegetables and Seasoning
Add the chopped savoy cabbage and the prepared root vegetables on top of the meat. Crumble the beef bouillon cube over the vegetables and pour the water into the slow cooker to provide the base for the cooking liquid.
Look for The vegetables should be partially submerged by the water.
Tip Distribute the bouillon evenly so the flavor permeates the entire hotpot during cooking.

Once the water is added and the bouillon is distributed, the ingredients are ready for the cooking process.

The liquid should be sufficient to partially cover the vegetables without drowning them, allowing for a braising effect rather than boiling. The pot should smell fresh and ready to be sealed.

Cooking and Serving

  1. Cooking and Serving
Cover the slow cooker and cook on the low setting for approximately 4 hours. Once finished, ensure the sausages have reached an internal temperature of at least 160°F (71°C). Let the dish rest for 5 minutes before serving.
Look for The vegetables should be tender and the liquid should be fragrant and steaming.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a meat thermometer to verify the internal temperature of the sausages.

After four hours of cooking, the hotpot should look rich and aromatic. The vegetables will have softened, and the sausages will be tender and infused with the smoky bacon flavor. Check the internal temperature of the sausages to ensure they are safe to eat before serving the meal on warm plates.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking. Ensure there is enough space for the liquid to circulate. Another error is failing to ensure the bouillon cube is properly crumbled; chunks of undissolved bouillon can lead to uneven seasoning.

Always check the sausages for doneness; undercooked meat is not only a safety risk but also lacks the desired texture. Finally, avoid lifting the lid too often during the cooking process, as this releases heat and moisture, which are essential for the slow cooking method.

How to tell it’s done

The hotpot is done when the vegetables are fork-tender and the sausages are fully cooked through. Use a digital meat thermometer to confirm that the sausages have reached a safe internal temperature of 160°F (71°C).

The cooking liquid should be flavorful and slightly thickened from the juices of the meat and vegetables, providing a comforting sauce for the components.

  • Ground meat: 160°F (71°C) in the thickest part
