Tips for success
For the most tender skirt steak, choose a well-marbled cut and trim any excess fat. Cutting against the grain after cooking is also important—it shortens the muscle fibers, making each bite more tender. If you have time, marinate the steak in a little lime juice and cumin for an hour before cooking to add extra flavor.
To make the sauce even richer, stir in a splash of heavy cream or a spoonful of cream cheese at the end of cooking. If you prefer a thicker sauce, remove the lid for the last 30 minutes to let some liquid evaporate.
For a spicier kick, add a diced chipotle pepper in adobo sauce along with the salsa. These small tweaks can be tailored to your taste.
Variations
- Chicken Fajita Bowl: Replace the skirt steak with boneless, skinless chicken thighs or breasts. Cook on low for 4 to 5 hours, or until the chicken is cooked through and shreds easily. Shred the chicken before serving and mix with the sauce.
- Vegetarian Black Bean Bowl: Omit the steak and add an extra can of black beans and a diced zucchini. Cook on low for 3 to 4 hours, until the vegetables are tender and the flavors meld. The queso and pepper jack provide plenty of richness.
- Spicy Chorizo Version: Brown fresh chorizo sausage in a skillet before adding to the slow cooker. Use the chorizo in place of the skirt steak for a spicier, more robust flavor. Reduce the salsa to 1/2 cup to balance the richness.
- Smoky Chipotle Twist: Add 1 to 2 chopped chipotle peppers in adobo sauce along with the salsa. This adds a deep smoky heat that pairs beautifully with the queso and corn. Adjust the amount to your spice tolerance.

Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the sauce has thickened too much. The dish also freezes well for up to 3 months—just thaw overnight in the fridge before reheating.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the cooker and start it on low.
Or, cook the full dish, let it cool, and store in portions for quick lunches or dinners throughout the week. The reheated dish tastes just as good as fresh.
Serving ideas
Serve this pepper jack skirt steak over a bed of warm Mexican rice or alongside crispy tortilla chips for dipping. A scoop of the saucy steak and beans is delicious piled onto tostadas, tucked into warm flour tortillas, or spooned over a baked potato. For a lighter option, serve it in lettuce cups or over a bed of greens.
To make it a complete meal, add a side of sour cream, sliced avocado, pickled onions, or a sprinkle of fresh cilantro. A squeeze of lime brightens the rich flavors.
This dish is hearty enough to stand alone, but the toppings let everyone customize their bowl to their liking. It’s a crowd-pleaser that’s as versatile as it is delicious.

Crockpot Pepper Jack Skirt Steak Fajita Bowl

Ingredients
- 2 lb beef skirt steak, cut into strips
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup frozen fire-roasted corn kernels
- 1 cup chunky roasted red tomato salsa
- 1 cup warm white queso blanco dip
- 1 cup shredded spicy pepper jack cheese
Instructions
- Place the skirt steak strips in the bottom of a 6-quart slow cooker. Top with the rinsed black beans, corn kernels, and salsa, spreading them evenly over the meat.
- Pour the warm queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese. Do not stir.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the steak is fork-tender and the sauce is bubbling. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the steak rest in the sauce for at least 3 minutes before serving. This allows the juices to redistribute.
- Spoon the steak and sauce over tortilla chips or Mexican rice. Serve hot, with extra queso on the side if desired.
