Before you start

Before starting, ensure your slow cooker is set up on a stable, heat-resistant surface away from any splashes or spills. Gather all your ingredients, including the pork, corn, seasoning, and enchilada sauce, so they are ready for assembly.

If you are using frozen corn, there is no need to thaw it beforehand as it will cook through perfectly during the long simmering process. Have two forks ready for the final shredding phase once the pork is fully cooked.

Ingredients at a glance (5)
  • 2 lb pork shoulder, cut into large chunks
  • 1 cup corn kernels, frozen or canned
  • 1 packet taco seasoning
  • 15 oz red enchilada sauce
  • 1 cup shredded cheddar cheese, for serving

Instructions

Layering and Initial Setup

  1. Assemble the ingredients
Place the pork shoulder chunks into the bottom of the slow cooker. Add the corn, sprinkle the taco seasoning evenly over the top, and pour the red enchilada sauce over all ingredients.
Look for all ingredients are layered
Tip Ensure the pork is evenly distributed to allow for uniform cooking throughout the process.

At the end of this phase, the ingredients should be neatly layered within the slow cooker. The pork chunks should be at the bottom to ensure they receive the most direct heat, covered by the corn, seasoning, and sauce. Check that your slow cooker is correctly plugged in and set to the low heat setting, ensuring the lid is securely closed to trap the heat and moisture inside for the duration of the cooking.

Slow Cooking the Pork

  1. Slow cook the pork
Cover the slow cooker and cook on low for 8 hours. Once the time is up, check that the pork is tender and reaches an internal temperature of at least 145°F (63°C). Let the meat rest at least 3 minutes before shredding.
Look for pork shreds easily with a fork
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Use a meat thermometer to ensure the pork is cooked safely through before proceeding to the final step.

During the long cook, the kitchen will begin to smell savory and aromatic as the spices and enchilada sauce penetrate the meat. The pork should be simmering gently, not boiling aggressively. At the end of the 8-hour window, the liquid should be bubbling slightly and the pork should look significantly softer and darker in color, indicating that the connective tissues have broken down sufficiently and the meat is ready to be shredded.

Final Shredding and Serving

  1. Shred and finish
Remove the pork from the slow cooker, shred it using two forks, and return it to the sauce to coat thoroughly. Serve in bowls topped with shredded cheese.
Look for cheese is melted and sauce is glossy
Tip Let the shredded meat rest for 5 minutes in the warm sauce to absorb the flavors before serving.

After shredding the pork, the mixture should look glossy and cohesive, with the sauce clinging to the tender meat fibers. The cheese, when added, should melt quickly into the warm pork mixture, creating a creamy and indulgent texture.

Check that the final dish is hot throughout and that the flavors are well-balanced. Ensure the bowls are warmed if possible, then garnish with any desired toppings before serving immediately to your guests.

Common mistakes

A common mistake is overcrowding the slow cooker with too many ingredients, which can prevent the pork from cooking evenly. Another error is failing to check the temperature of the meat, which can lead to pork that is either undercooked or overly dry.

Avoid lifting the lid frequently, as each time you open the slow cooker, you lose heat and increase the total cooking time, which can disrupt the delicate balance of the simmering process.

How to tell it’s done

The pork is done when it reaches an internal temperature of at least 145°F (63°C). Visually, the meat should be extremely tender and should fall apart easily when pulled with two forks.

If the meat still offers resistance or feels tough, continue cooking for another thirty minutes before checking again. Always allow the pork to rest for at least 5 minutes after shredding so the juices redistribute, ensuring the most succulent and flavorful final result.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
