Before you start

Before beginning, ensure that your slow cooker insert is clean and free of any residual flavors from previous meals. If you are using a block of chocolate, chop it into roughly uniform pieces to help it melt more evenly.

Measure out the milk and heavy cream in advance so that you can pour them into the slow cooker quickly. Clear enough counter space around the slow cooker to allow for easy access, and have your whisk and ladle ready nearby to avoid searching for tools while the mixture is heating.

Ingredients at a glance (6)
  • 10 oz milk chocolate squares
  • 1/3 cup salted caramel
  • 1 pinch salt
  • 4 cups milk
  • 1 cup heavy cream
  • whipped cream, for serving

Instructions

Initial assembly

  1. Combine ingredients
Place the milk chocolate squares into the bottom of the slow cooker insert. Add the salted caramel, the pinch of salt, the milk, and the heavy cream to the vessel.
Look for Ensure chocolate is distributed evenly
Tip Use high-quality chocolate for a smoother melt

At this stage, the slow cooker contains the solid chocolate pieces, caramel, and the liquid dairy components. Ensure that the ingredients are layered or placed so that the chocolate is in contact with the base, but do not worry about mixing them thoroughly yet, as the heat will facilitate the blending process during the cooking phase.

Melting and infusion

  1. Slow cook the mixture
Cover the slow cooker and cook on low heat for 2 hours, whisking occasionally to ensure the chocolate and caramel are fully melted and incorporated into the dairy base.
Look for Mixture is smooth and glossy
Tip Whisk thoroughly after the first hour

During the cooking process, the chocolate and caramel will gradually soften and liquefy. Check the mixture after the first hour; it should look like a dark, uniform liquid with a glossy sheen.

If you notice any stubborn pieces of chocolate, give it a quick, vigorous whisk to fully emulsify the ingredients before continuing the cook time.

Serving the drink

  1. Serve the hot chocolate
Ladle the hot chocolate into mugs and top each serving with a generous dollop of whipped cream before serving while hot.
Look for Steam is rising from the mugs
Tip Garnish with extra caramel drizzle if desired

The final result should be a rich, aromatic, and steaming hot chocolate. The texture should be consistent throughout, with no separation. Once you have ladled the drink into mugs, the whipped cream should float gently on the surface without sinking immediately, indicating that the hot chocolate has the appropriate body and density.

Common mistakes

A common mistake is using high heat settings, which can cause the milk to scorch or the chocolate to separate. Always stick to the low setting to ensure gentle, controlled melting.

Another error is failing to stir the mixture periodically; without occasional whisking, the chocolate may settle at the bottom and potentially burn. Finally, avoid adding too much extra salt, as the salted caramel already provides a significant amount of seasoning; it is better to add a tiny amount and adjust at the very end.

How to tell it’s done

The hot chocolate is done when the mixture is completely uniform, glossy, and steaming. The chocolate and caramel should be fully melted and integrated with the milk and cream, with no visible streaks or lumps remaining.

When you lift the whisk, the liquid should coat it thinly and evenly, indicating a smooth consistency. The temperature should be hot but not boiling, as boiling can cause the dairy to separate or produce an unpleasant film on the surface of the drink.
