Before you start

Before you start, make sure your slow cooker is clean and ready. You'll need a 6-quart model for this recipe, but a 4-quart will also work if you arrange the chicken in a single layer. Measure the salsa verde and have the chiles and cheeses ready.

If you're serving with rice, start it before you assemble the slow cooker so everything finishes at the same time. There's no need to pre-cook anything; this is truly a dump-and-go meal.

Ingredients at a glance (5)
  • 6 boneless skinless chicken thighs
  • 1 1/2 cups tomatillo salsa verde
  • 1 can (4 oz) diced Hatch green chiles
  • 8 oz shredded Oaxaca cheese
  • 4 oz shredded Mexican four-cheese blend

Instructions

Layer Everything

  1. Layer the Chicken
Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Season with a pinch of salt and pepper if desired, though the salsa adds plenty of flavor.
Look for The chicken should cover the bottom of the slow cooker evenly.
Tip Trimming excess fat is optional; the thighs stay juicy either way.
  2. Add Salsa and Chiles
Pour the tomatillo salsa verde over the chicken, spreading it to cover as much of the meat as possible. Add the diced Hatch green chiles and stir gently to combine, making sure the chiles are distributed throughout the sauce.
Look for The chicken should be mostly submerged in the salsa mixture.
Tip Use a spatula to scrape every bit of salsa from the jar.
  3. Top with Cheese
Sprinkle the shredded Oaxaca cheese evenly over the top of the chicken and salsa. Follow with the Mexican four-cheese blend, covering the surface completely. Do not stir after adding the cheese.
Look for The cheese forms a thick, even blanket over the entire dish.
Tip Shredding your own cheese from a block melts more smoothly than pre-shredded.

After this phase, the slow cooker contains a neat layer of chicken, topped with salsa and chiles, and covered with a thick blanket of shredded cheese. The cheese is still dry and crumbly, but it will melt as the cooker heats. The colors are vibrant: golden chicken, green salsa, and white cheese. Take a moment to ensure the cheese covers the entire surface so it melts evenly.

Slow Cook

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C). The cheese will melt and bubble around the edges.
Look for The sauce is bubbling gently and the cheese is fully melted and blistered in spots.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid; each peek adds 15–20 minutes of cook time.
  2. Check the Chicken
After 4 hours, check the chicken by inserting an instant-read thermometer into the thickest part of a thigh. It should read 165°F (74°C). The meat should shred easily with a fork.
Look for The chicken is opaque and pulls apart with little resistance.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken isn't done, return the lid and cook for 30 more minutes.
  3. Stir Gently
Gently stir the chicken and sauce to coat the meat with the melted cheese and salsa. The chicken will break into large, tender chunks. Do not over-stir; you want nice pieces, not shredded mush.
Look for The sauce is thick and creamy, and the chicken is coated in cheese.
Tip Use a wooden spoon or silicone spatula to avoid breaking the chicken too much.

At the end of this phase, the kitchen smells incredible. The cheese has melted into a golden, blistered layer, and the sauce is bubbling around the edges. The chicken is tender and easily pierced with a fork. The sauce is slightly thickened and has a rich, tangy aroma. Check the internal temperature of the chicken; it should be 165°F (74°C) or higher.

Stir and Serve

  1. Serve Over Rice
Spoon a generous portion of the chicken and sauce over steamed Spanish rice or warm tortillas. Use a slotted spoon if you prefer less sauce, or ladle extra sauce over the top for extra flavor.
Look for The chicken is glossy with sauce and the cheese is stretchy.
Tip Warm tortillas or rice absorb the sauce beautifully.

After gently stirring, the chicken is coated in a creamy, emerald-green sauce with ribbons of melted cheese. The meat is in large, tender chunks that hold their shape but pull apart easily.

The sauce is thick enough to cling to the chicken and rice. Spoon it over warm rice or into tortillas. The dish looks rustic and inviting, with steam rising and cheese stretching from the spoon.

Common mistakes

One common mistake is lifting the lid too often. Every time you open the slow cooker, you release heat and add 15–20 minutes to the cooking time. Trust the process and keep the lid on. Another mistake is using chicken breasts instead of thighs; they dry out.

Also, don't skip the cheese on top — it's what makes the sauce creamy. Finally, don't over-stir at the end. Gently fold the chicken to coat it, but let it stay in large chunks.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. The meat should be fork-tender and easily pull apart. The sauce should be bubbling gently around the edges and the cheese fully melted.

If the chicken isn't cooked through after 4 hours, continue cooking in 30-minute increments until it reaches the correct temperature. Let the dish sit for a few minutes before serving to allow the sauce to thicken slightly.

  • Poultry: 165°F (74°C) in the thickest part
