Before you start

Before you begin, ensure your slow cooker insert is clean and dry. Gather all your ingredients and measure the wine and garlic accurately. If you are using baby carrots, give them a quick rinse under cold water.

If using regular carrots, peel and chop them into uniform one-inch pieces to ensure they cook evenly alongside the chicken. Have your tongs and serving plates ready so you can move quickly once the cooking time is finished.

Ingredients at a glance (5)
  • 6 bone-in skin-on chicken drumsticks
  • 8 oz sliced white mushrooms
  • 1 cup baby carrots
  • 2 tsp minced garlic
  • 1/2 cup dry red wine

Instructions

Preparation and assembly

  1. Assemble the ingredients
Place the bone-in skin-on chicken drumsticks into the bottom of the slow cooker stoneware insert. Arrange the sliced white mushrooms and baby carrots around the chicken. Add the minced garlic over the top, then pour the dry red wine evenly over the entire mixture.
Look for Ensure the chicken is arranged in a single layer if possible for even cooking.
Tip Use a dry red wine like a Cabernet Sauvignon or Merlot for the best flavor depth.

At this stage, the slow cooker contains the raw chicken, vegetables, and wine. Everything should be arranged cleanly in the insert. Ensure the garlic is evenly distributed so the flavor permeates the entire dish during the long, slow braising process.

Slow cooking process

  1. Slow cook the chicken
Cover the slow cooker with the lid. Cook on the high setting for 4 hours, or until the chicken is tender and fully cooked through. The meat should pull away easily from the bone.
Look for The sauce will have thickened slightly and the vegetables will be fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during the first 3 hours to maintain a consistent temperature.

While cooking, the slow cooker will emit a savory, wine-infused aroma. The chicken will gradually change from raw to a cooked, pale color. Check that the liquid level remains consistent and the vegetables are submerged enough to soften properly.

Final plating

  1. Serve the dish
Carefully remove the drumsticks from the slow cooker using tongs. Transfer them to a serving plate along with the cooked mushrooms and carrots. Spoon some of the reduced red wine sauce from the bottom of the insert over the meat before serving warm.
Look for The chicken meat should be opaque white with no signs of pink near the bone.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Let the drumsticks rest for 5 minutes after removing from the slow cooker to allow the juices to redistribute.

The final dish features tender, succulent chicken with a rich, dark red-brown sauce. The mushrooms and carrots should be perfectly cooked and coated in the flavorful liquid. The chicken should be ready to pull apart with a fork, indicating a successful braise.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent even cooking. Ensure the chicken pieces have enough space to sit in the sauce.

Another error is checking the food too frequently; opening the lid lets heat escape and adds significant time to the process.

Finally, do not salt the sauce too early, as the wine reduction can become quite salty as the liquid evaporates during the long cook time.

How to tell it’s done

The drumsticks are done when the meat is completely opaque and pulls away easily from the bone. Using a meat thermometer, ensure the internal temperature reaches at least 165°F (74°C) at the thickest part of the meat, avoiding the bone.

The vegetables should be soft enough to pierce easily with a fork, and the sauce should have a glossy, slightly thickened consistency.

  • Poultry: 165°F (74°C) in the thickest part
