Tips for success

To enhance the depth of the flavor, you can sear the beef cubes in a hot skillet before adding them to the slow cooker, though this is optional. Browning the meat adds a caramelized crust that deepens the color and complexity of the final sauce. If you choose to do this, ensure the pan is very hot and sear the beef in small batches to avoid steaming it.

If you find the sauce is too thin at the end of the cooking time, you can remove the lid for the final 30 minutes of cooking to allow some of the liquid to evaporate.

Alternatively, you can transfer the sauce to a small saucepan and simmer it over medium heat until it reduces to your preferred consistency. This simple step can make a big difference in the richness of the final presentation.

Variations

  • Mushroom and Beef Stew: Add 8 ounces of sliced cremini mushrooms to the slow cooker along with the onions and carrots. The mushrooms will absorb the red wine sauce and add an earthy, savory depth to the stew.
  • Herbed Beef Stew: Incorporate a bouquet garni of fresh thyme, bay leaves, and parsley during the cooking process. Remove the herbs before serving to infuse the stew with classic French aromatics.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 3 months.
Reheat
Thaw in the refrigerator overnight and reheat on the stovetop over low heat until hot.

Allow the stew to cool to room temperature for no more than 2 hours before transferring it to an airtight container. Properly stored, it will stay fresh in the refrigerator for up to 3 days. When storing, ensure the meat is fully covered by the sauce to prevent it from drying out. If you notice any signs of spoilage, such as an off-smell or discoloration, discard the leftovers immediately.

This stew is an excellent candidate for making ahead, as the flavors often improve after sitting for a day. Prepare the recipe as directed, allow it to cool completely, and store it in the refrigerator.

Reheat the stew gently on the stovetop over low heat, stirring occasionally, until it is heated through. This makes it a convenient option for busy weeknights or for hosting guests where you want to spend less time in the kitchen.

Serving ideas

Serve the beef stew in warm, shallow bowls to help retain the heat. The richness of the red wine sauce pairs beautifully with simple sides like crusty bread, which is perfect for mopping up every last drop of the gravy.

Alternatively, serve it over a bed of creamy mashed potatoes or buttered egg noodles to create a truly hearty and satisfying meal that balances the intensity of the braised beef.

Consider adding a fresh, crisp side salad with a light vinaigrette to cut through the richness of the stew. The acidity of the salad dressing provides a nice contrast to the deep, savory notes of the red wine braise.

A sprinkle of freshly chopped herbs, such as parsley, can also add a bright, fresh finish to the plate, enhancing both the visual appeal and the overall flavor profile of the dish.

Frequently asked questions

Can this stew be made with a different type of wine?
Yes, any dry red wine will work well for this recipe. Options like Cabernet Sauvignon, Merlot, or Pinot Noir are all excellent choices. The key is to select a wine that is dry rather than sweet to ensure the final sauce is balanced and savory.
Is it necessary to sear the beef before slow cooking?
Searing the beef is not strictly necessary for the recipe to work, but it does add a significant layer of flavor through the Maillard reaction. If time permits, searing the meat in a hot pan before adding it to the slow cooker will result in a more complex and professional-tasting stew.
How can the sauce be thickened if it remains too thin?
If the sauce is thinner than desired after cooking, it can be reduced by simmering it in a separate saucepan on the stovetop. Alternatively, a small slurry made of equal parts cornstarch and cold water can be stirred into the sauce during the final 20 minutes of cooking to help it thicken quickly.
