Tips for success
To get the creamiest sauce, use full-fat sour cream and shred your own Monterey Jack cheese. Pre-shredded cheese often contains anti-caking agents that prevent smooth melting. If you want a spicier dish, choose a hot enchilada sauce or add a minced chipotle pepper in adobo.
For a milder version, use mild sauce and add a pinch of smoked paprika for depth. Letting the dish rest for 10 minutes after cooking allows the sauce to thicken slightly and the flavors to settle.
This recipe is incredibly versatile. Serve it over rice, quinoa, or cauliflower rice for a low-carb option. It also makes amazing tacos, burrito bowls, or even a topping for baked potatoes.
If you have leftovers, they taste even better the next day as the flavors continue to meld. You can also use the shredded chicken in enchiladas, quesadillas, or nachos. The possibilities are endless, so feel free to get creative with how you serve it.
Variations
- Spicy Chipotle: Add 1–2 minced chipotle peppers in adobo sauce to the slow cooker along with the enchilada sauce. This adds a smoky, spicy kick that pairs well with the creamy cheese.
- Green Enchilada: Swap the red enchilada sauce for green enchilada sauce and use pepper jack cheese instead of Monterey Jack. The flavor becomes brighter and more tangy.
- Bean Swap: Replace pinto beans with black beans or kidney beans for a different texture. Add a can of diced green chiles for extra flavor.
- Creamy Avocado: After cooking, stir in 1 diced avocado and a handful of fresh cilantro just before serving. The cool avocado balances the heat and adds a fresh, creamy element.

Serving ideas
Serve this dish with warm flour tortillas, rice, or tortilla chips for dipping. A side of Mexican street corn, a simple green salad, or refried beans would round out the meal beautifully. For a fresh contrast, top with diced avocado, chopped cilantro, or a squeeze of lime. The creamy, spicy sauce pairs well with cool, crunchy toppings.
For a heartier meal, pile the chicken mixture onto tostadas and top with shredded lettuce, diced tomatoes, and a dollop of sour cream. Or use it as a filling for enchiladas—just roll it in tortillas, top with more sauce and cheese, and bake until bubbly. However you serve it, this dish is sure to become a family favorite.

Slow-Cooker Red Enchilada Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 1 1/2 cups red enchilada sauce
- 1 can (15 oz) pinto beans, drained and rinsed
- 1/2 cup sour cream
- 2 cups shredded Monterey Jack cheese
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Pour the red enchilada sauce evenly over the chicken, then add the drained pinto beans and stir gently to coat everything. Spread the sour cream over the top, then sprinkle with the shredded Monterey Jack cheese.
- Cover the slow cooker and cook on LOW for 6 hours, or on HIGH for 3 hours, until the chicken is tender and shreds easily with a fork. The sauce will be bubbling gently around the edges and the cheese will be fully melted into a creamy gravy.
- Using two forks, shred the chicken thighs directly in the slow cooker. Stir the shredded chicken into the sauce so every piece is coated. The sauce will thicken slightly as it mixes with the chicken and melted cheese.
- Taste the sauce and add salt or a pinch of chili powder if needed. If the sauce seems too thin, let it cook uncovered for 10–15 minutes to reduce. If it seems too thick, stir in a splash of chicken broth or water.
- Warm flour tortillas in a dry skillet or in the microwave. Spoon the chicken mixture over the tortillas or serve it alongside them. Garnish with fresh cilantro, diced onion, or a squeeze of lime if desired (not shown in video).
