Tips for success
For the best texture, serve the bake warm, straight from the slow cooker. The rolls are soft and custardy, and the berry sauce is at its most fluid. If you prefer a firmer set, let it rest for 5 minutes before serving.
To get clean portions, use a large spoon or a pie server and scoop from the bottom to include the berry sauce. The bake can also be transferred to a serving platter, but be gentle — it’s tender.
The drizzle is what makes this bake look extra special. Melt the white chocolate slowly and stir often to avoid burning. If the cream cheese icing is too thick to drizzle, warm it in the microwave for 10 seconds or whisk in a teaspoon of milk.
For a more pronounced raspberry flavor, you can warm a few extra raspberries with a spoonful of sugar and spoon that over the top as well — though the video version keeps it simple with just the two drizzles.
Variations
- Blueberry White Chocolate: Swap the raspberries for fresh blueberries and use lemon zest in the cream mixture. The blueberries will burst into a deep purple sauce that pairs beautifully with white chocolate.
- Chocolate Hazelnut: Replace the white chocolate chips with milk chocolate chips and add 2 tablespoons of chocolate-hazelnut spread dolloped between the layers. Omit the almond extract and use vanilla instead.
- Apple Cinnamon: Use 2 cups of diced peeled apples tossed with 1 teaspoon of ground cinnamon instead of raspberries. Omit the white chocolate chips and drizzle with caramel sauce instead.
- Peach Cream: Use 2 cups of sliced fresh peaches (or frozen, thawed) in place of raspberries. Keep the white chocolate chips and add 1/4 teaspoon of ground ginger to the cream mixture.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The bake will become softer but remains safe to eat.
- Freezer
- Wrap the cooled bake tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat individual portions in the microwave for 30 to 45 seconds, or warm the whole bake in a 300°F (150°C) oven for 10 to 15 minutes until heated through.
Leftover bake can be stored in an airtight container in the refrigerator for up to 3 days. The texture will soften further as it sits, but it remains delicious. To reheat, place a portion in the microwave for 30 to 45 seconds or in a 300°F (150°C) oven for 10 minutes. The drizzle may lose its shine, but the flavor will still be great.
This recipe is best served fresh, but you can assemble the layers in the slow cooker insert and refrigerate overnight, then start cooking the next day. If doing this, add 15 to 20 minutes to the cook time because the ingredients start cold. The cream mixture can also be whisked and stored in the refrigerator for up to 24 hours.
Serving ideas
Serve the bake warm, directly from the slow cooker, so everyone can see the bubbling berry sauce and glossy white chocolate. Scoop generous portions onto plates or into bowls, making sure to include some of the ruby-red sauce from the bottom.
A dollop of extra whipped cream or a scoop of vanilla ice cream would be lovely, though the video keeps it simple with just the drizzle.
This bake is perfect for brunch, bridal showers, or a cozy weekend breakfast. It pairs wonderfully with coffee, tea, or a glass of cold milk.
Because it’s sweet and rich, small portions go a long way — 8 servings is a good guideline, but you can easily stretch it to 10 or 12 if you cut smaller pieces. Leftovers are just as good the next day, reheated gently.

Crockpot Raspberry White Chocolate Cinnamon Roll Bake

Ingredients
- 2 cans refrigerated cinnamon rolls with icing (12 oz each)
- 2 cups fresh raspberries
- 1 cup white chocolate chips
- 1/2 cup heavy cream
- 2 large eggs
- 1 tsp almond extract
- 1/2 cup white chocolate chips, melted
- 1/2 cup cream cheese icing
Instructions
- Open the cans of refrigerated cinnamon rolls and set aside the icing packets. Cut each cinnamon roll into quarters. In a 6-quart slow cooker, arrange half of the quartered rolls in an even layer. Scatter 1 cup of the fresh raspberries over the rolls, then sprinkle with 1/2 cup of the white chocolate chips. Repeat with the remaining rolls, raspberries, and white chocolate chips to create a second layer.
- In a mixing bowl, whisk together the heavy cream, eggs, and almond extract until fully combined and slightly frothy. Pour the mixture evenly over the layered rolls, making sure to cover the top layer as much as possible.
- Cover the slow cooker with the glass lid. Cook on LOW for 2.5 hours, or until the rolls are puffed, the raspberries have burst and released their juices, and the white chocolate chips have melted into a glossy crust. Do not open the lid during the first 2 hours of cooking.
- After 2.5 hours, insert an instant-read thermometer into the center of the bake. The internal temperature should read at least 160°F (71°C) to ensure the eggs are fully set. The rolls should be golden brown on top and the berries should have turned into a thick, ruby-red sauce.
- While the bake is still warm, place the 1/2 cup white chocolate chips in a small microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until melted and smooth. Warm the cream cheese icing in a separate bowl for about 10 seconds in the microwave to loosen it.
- Spoon the melted white chocolate and cream cheese icing over the warm rolls. Let the drizzle set for 2 to 3 minutes, then serve the bake directly from the slow cooker or transfer to a serving dish. Scoop portions with a large spoon, making sure to get some of the berry sauce from the bottom.
