Tips for success
For the best texture, always slice the beef against the grain. This shortens the muscle fibers, making each bite more tender.
If you prefer shredded beef, use two forks to pull the meat apart while it is still warm. The resting period is crucial—do not skip it, as it allows the juices to redistribute and keeps the meat moist.
To thicken the gravy, remove the beef and vegetables, then whisk a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) into the hot liquid.
Simmer for a few minutes until it reaches the desired consistency. Alternatively, mash a few of the cooked potatoes into the gravy for a naturally thicker sauce. Taste and adjust seasoning with salt and pepper before serving.
Variations
- Add Herbs: Sprinkle fresh thyme or rosemary over the roast before cooking for an earthy, aromatic note. Alternatively, add a bay leaf to the gravy and remove it before serving.
- Use Different Vegetables: Swap the potatoes for parsnips or turnips, or add mushrooms along with the carrots. Root vegetables hold up well to long cooking and absorb the gravy beautifully.
- Make It Spicy: Add a pinch of red pepper flakes or a chopped chipotle pepper in adobo sauce to the gravy for a subtle kick. Serve with pickled jalapeños on the side.
- Balsamic Glaze: Stir 2 tablespoons of balsamic vinegar into the gravy before cooking for a touch of tangy sweetness. Finish with a drizzle of balsamic glaze before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat in a saucepan over medium heat, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered pot on the stovetop over low heat, or in the microwave in 1-minute intervals, stirring occasionally.
Store leftover pot roast in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making leftovers even more delicious.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much. The potatoes and carrots will soften further but remain enjoyable.
This recipe is ideal for meal prep. Assemble the slow cooker the night before, cover, and refrigerate the insert. In the morning, place it in the slow cooker base and start cooking. Alternatively, cook the roast fully, then cool and refrigerate it in the gravy. Reheat gently before serving.
Serving ideas
Serve the pot roast straight from the slow cooker for a casual family dinner, or transfer to a platter for a more polished presentation.
Ladle the rich gravy over the beef and vegetables, and offer extra gravy on the side. The dish pairs beautifully with crusty bread, buttered noodles, or a simple green salad to balance the richness.
For a fun twist, pile the shredded beef onto toasted brioche slider buns with a spoonful of gravy for hearty sandwiches. The potatoes and carrots can be served alongside or mashed into the gravy. This recipe is also wonderful over mashed potatoes or polenta to soak up every bit of the savory sauce.

Slow-Cooker Pot Roast with Yukon Potatoes and Carrots

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 1 lb heirloom carrots, thick-cut
- 2 cups rich brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Scatter the halved baby Yukon Gold potatoes and thick-cut heirloom carrots around the roast, tucking them into the sides.
- Pour the rich brown gravy over the roast and vegetables. Dot the top of the roast with the unsalted butter pats.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and easily shreds. The vegetables should be tender when pierced with a fork. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the warm liquid for at least 10 minutes. This allows the juices to redistribute through the meat.
- Transfer the roast to a cutting board. Using two forks, shred the beef into large chunks, or slice it against the grain into thick pieces. Return the beef to the slow cooker with the gravy and vegetables.
- Spoon the beef, potatoes, and carrots onto plates. Ladle extra gravy from the slow cooker over the top. Serve hot, with toasted brioche slider buns on the side if desired.
