Tips for success

For the most flavorful results, use a good-quality beef au jus or low-sodium beef broth.

If you prefer a thicker sauce, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the slow cooker during the last 30 minutes of cooking.

To make this recipe even more hands-off, you can assemble everything in the slow cooker insert the night before and refrigerate overnight.

In the morning, just place the insert into the slow cooker base and turn it on – no need to warm it up first.

Variations

  • Herb-Infused: Add 2 sprigs fresh thyme and 1 sprig fresh rosemary to the slow cooker with the pork. Remove the herb stems before shredding. The herbs add an earthy, aromatic note that pairs beautifully with the mushrooms.
  • Spicy Kick: Stir 1 teaspoon smoked paprika and 1/2 teaspoon cayenne pepper into the sour cream and mustard mixture before adding to the slow cooker. This adds a warm, smoky heat that complements the creamy sauce.
  • Creamy Mushroom: Replace the portobello caps with a mix of cremini and shiitake mushrooms for a deeper, more complex mushroom flavor. Increase the sour cream to 3/4 cup for an even richer sauce.
  • Balsamic Glaze: Stir 2 tablespoons balsamic vinegar into the au jus before pouring it into the slow cooker. The vinegar adds a subtle tangy sweetness that balances the cream and mustard.

Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if the sauce has thickened too much.

This recipe is perfect for meal prep. Cook the pork as directed, then portion it into containers with rice or vegetables. It can be refrigerated for up to 4 days, or frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving ideas

Serve the shredded pork over steamed white rice, mashed potatoes, or egg noodles.

A side of roasted green beans or a crisp green salad balances the richness of the creamy sauce. For a low-carb option, serve over cauliflower rice or alongside sautéed spinach.

The pan sauce is the star – don't skimp on it. Spoon it generously over the pork and any sides. A sprinkle of fresh parsley or chives adds color and freshness, though the recipe is delicious as-is.

Frequently asked questions

Can this recipe be made with a different cut of pork?
Yes, pork shoulder or pork butt work well in place of sirloin. They have more fat, which makes them even more forgiving in the slow cooker. Adjust the cooking time as needed – shoulder may take up to 10-12 hours on low to become fork-tender. The internal temperature should still reach at least 145°F (63°C) for safety, though it will likely be higher for shredding.
Why does the sauce sometimes look curdled?
Curdling can happen if the sour cream is low-fat or if the slow cooker is on high heat. To avoid this, use full-fat sour cream and cook on low. If the sauce does curdle slightly, it's still safe to eat, but for a smoother texture, whisk in a tablespoon of all-purpose flour or cornstarch mixed with water to help re-emulsify it.
Can this be cooked on high instead of low?
Yes, but the texture may be less tender and the sauce may not develop the same depth of flavor. If cooking on high, check for doneness at 4-5 hours. The pork is done when it reaches 145°F (63°C) and shreds easily. Keep in mind that the mushrooms and sauce may not be as silky as with the low-and-slow method.
Is it necessary to use beef au jus, or can broth be substituted?
Beef au jus adds a rich, savory flavor that enhances the pork. If you don't have it, low-sodium beef broth is a fine substitute. To mimic the depth of au jus, add a splash of Worcestershire sauce or a teaspoon of soy sauce to the broth. This will help replicate the umami notes.
Can leftovers be frozen?
Yes, this dish freezes beautifully. Cool the pork and sauce completely, then transfer to airtight containers or resealable freezer bags. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave, adding a splash of broth if the sauce has thickened too much.

Slow-Cooker Portobello Dijon Pork Roast

Prep 10 minCook 8 hTotal 8 h 10 minServes 6
Shredded pork sirloin roast with portobello mushrooms in creamy Dijon sauce in a slow cooker

Ingredients

  • 3 1/2 lb boneless pork sirloin roast
  • 8 oz sliced portobello mushroom caps
  • 2 tbsp minced garlic
  • 1/2 cup sour cream
  • 1/4 cup whole-grain Dijon mustard
  • 1 cup beef au jus

Instructions

  1. Place the pork sirloin roast in the center of a 6-quart slow cooker. Scatter the sliced portobello mushroom caps over and around the roast. Sprinkle the minced garlic evenly over the mushrooms and pork.
  2. Dollop the sour cream over the top of the roast and mushrooms. Spoon the whole-grain Dijon mustard over the surface. Pour the beef au jus down the side of the slow cooker, avoiding the top of the roast so the seasoning isn't washed off.
  3. Cover the slow cooker and cook on low for 8 to 10 hours, until the pork is fork-tender and shreds easily. The internal temperature of the pork should read at least 145°F (63°C) when checked with an instant-read thermometer, but for shredding, it will likely be higher. Let it rest for 3 minutes before slicing.
  4. Using two forks, shred the pork directly in the slow cooker. Stir the shredded pork into the cooking liquid and mushroom mixture so everything is coated in the creamy Dijon pan sauce.
  5. Turn off the slow cooker and let the shredded pork rest in the warm gravy for at least 3 minutes before serving. This allows the juices to redistribute into the meat, keeping it moist and flavorful.
  6. Spoon the shredded pork and mushrooms over steamed white rice, mashed potatoes, or crusty bread. Ladle extra pan sauce over each serving.
Contains: milk, mustard
