Tips for success

For the most flavorful result, choose a good-quality brown gravy. If you have time, make a quick gravy from scratch using beef or pork stock, a roux, and a splash of Worcestershire sauce—but a store-bought version works perfectly in a pinch.

The butter adds a silky finish, so don't skip it. If you want a thicker sauce, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the gravy during the last 30 minutes of cooking.

To make this even more hands-off, you can assemble everything in the slow cooker insert the night before, cover, and refrigerate overnight. In the morning, just place the insert in the slow cooker and turn it on.

This is a great meal-prep trick for busy weeks. The cooked pork also freezes beautifully, so consider making a double batch and stashing half for later.

Variations

  • Spicy Chipotle Pork: Add 2-3 chipotle peppers in adobo sauce (minced) along with the gravy for a smoky, spicy kick. Reduce the rosemary to 2 sprigs and add a teaspoon of ground cumin. Serve with pickled onions and avocado.
  • Mushroom Gravy Pork: Sauté 8 oz sliced mushrooms in butter until golden, then add them to the slow cooker with the roast. Use a mushroom gravy instead of beef or pork gravy. The earthy mushrooms complement the herbs beautifully.
  • Balsamic Herb Pork: Replace the brown gravy with 1 cup balsamic vinegar and 1 cup beef broth. Add 2 tablespoons brown sugar and 1 tablespoon Dijon mustard. The result is a sweet-tangy sauce with a deep, complex flavor.
  • Cider-Braised Pork: Use 2 cups apple cider instead of gravy, and add 1 sliced onion. The pork cooks in a fruity, slightly sweet liquid that reduces into a light sauce. Omit the butter and serve with extra cider reduction.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. The gravy will thicken when chilled; thin with broth or water when reheating.
Freezer
Freeze the shredded pork in a freezer-safe container for up to 3 months.
Reheat
Reheat the pork and gravy in a saucepan over medium heat, adding a splash of broth or water to loosen the sauce. Stir occasionally until heated through.

Store leftover pork in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; you can thin it with a splash of broth or water when reheating. Reheat gently on the stovetop or in the microwave until warmed through. The flavors actually deepen overnight, making leftovers even more delicious.

This recipe is ideal for making ahead. You can assemble the raw ingredients in the slow cooker insert up to 24 hours in advance and refrigerate. When ready to cook, simply place the insert in the slow cooker and set the timer. Cooked pork can be made up to 3 days ahead and reheated gently. The shredded pork also freezes well for up to 3 months.

Serving ideas

Serve the shredded pork on toasted brioche slider buns for a fun, casual dinner. Pile the meat high, spoon extra gravy over the top, and add a sprinkle of fresh herbs if you like.

The sweet, buttery buns contrast beautifully with the savory pork and rich gravy. This is perfect for game day, family dinners, or any time you want a crowd-pleasing meal.

For a more comforting presentation, serve the pork over creamy mashed potatoes, egg noodles, or polenta. The gravy acts as a sauce, soaking into the starch and making every bite satisfying.

Add a simple green salad or roasted vegetables on the side to round out the meal. Leftovers are great in sandwiches, tacos, or even on top of a baked potato.

Frequently asked questions

Can this recipe be made with a different cut of pork?
Yes, pork shoulder or pork butt are excellent substitutes. They have more fat, so they become even more tender and flavorful. Adjust the cooking time: a 3-4 pound shoulder may need an extra 1-2 hours on low. Pork loin is leaner and may dry out, so stick to sirloin or shoulder for best results.
Why does the pork sometimes come out dry?
Dry pork is usually the result of overcooking or cooking on high for too long. The low setting is gentler and allows the connective tissue to break down without drying out the meat. Also, make sure the roast is submerged in enough gravy—if it's too exposed, it can dry out. Resting the meat before shredding also helps retain moisture.
Can this recipe be doubled?
Yes, you can double the ingredients if your slow cooker is large enough (at least 7 quarts). Keep the cooking time the same, but ensure the roast fits comfortably and is mostly submerged in the gravy. If the slow cooker is crowded, the pork may take longer to cook, so check for doneness with a fork.
How can the gravy be thickened?
If the gravy is too thin, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the slow cooker during the last 30 minutes of cooking. Alternatively, remove the pork and simmer the gravy on the stovetop to reduce it. For a richer texture, whisk in a tablespoon of butter at the end.
Can this recipe be made in an Instant Pot?
Yes, you can adapt it for a pressure cooker. Sear the roast on sauté mode, then add the garlic, herbs, and gravy. Cook on high pressure for 60-75 minutes, then natural release for 15 minutes. Shred the pork and serve. The cooking time may vary depending on the size of the roast.

Slow-Cooker Pork Sirloin Roast with Rosemary Thyme Gravy

Shredded pork sirloin roast in a slow cooker with rich brown gravy and fresh herbs

Ingredients

  • 3 1/2 lb boneless pork sirloin roast
  • 12 cloves garlic, smashed
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 2 cups beef or pork brown gravy
  • 4 tbsp unsalted butter, cut into pats

Instructions

  1. Place the pork sirloin roast in the center of the slow cooker insert. Scatter the smashed garlic cloves and fresh rosemary and thyme sprigs over the top of the roast, tucking some underneath if desired.
  2. Pour the brown gravy evenly over the roast and aromatics. Dot the top with the butter pats, distributing them over the surface.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but for shredding it will be much higher. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker. Remove the roast to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute, ensuring moist, flavorful meat.
  5. Using two forks, shred the pork into bite-size pieces. Return the shredded pork to the slow cooker with the gravy and stir to coat. Discard the herb sprigs and any large garlic pieces if desired, or leave the garlic cloves for extra flavor.
  6. Serve the shredded pork on toasted slider buns or over mashed potatoes, spooning extra gravy over the top. Garnish with fresh herbs if desired.
