Tips for success

To add extra depth to the sauce, you can sear the pork roast in a hot pan before placing it in the slow cooker. This creates a browned crust on the exterior of the meat, which adds a complex, savory flavor to the dish.

If you choose to do this, ensure the pan is very hot and the oil is shimmering before adding the pork, and then immediately transfer the seared roast to the slow cooker to continue with the recipe.

If you find the sauce is too thin after the cooking time is complete, you can remove the pork roast to a platter and keep it warm. Then, switch the slow cooker to a high setting or transfer the sauce to a small saucepan on the stove.

Let the liquid simmer for a few minutes until it reduces to your desired consistency. This simple step can significantly enhance the mouthfeel and flavor concentration of the final creamy sauce.

Variations

  • Mushroom Orloff: Add two cups of sliced cremini or button mushrooms to the slow cooker along with the onions. The mushrooms will absorb the cream and herb flavors, adding a wonderful earthy depth to the final sauce.
  • Spicy Orloff: Incorporate a teaspoon of red pepper flakes or a small amount of diced jalapeño into the herb mixture. This provides a subtle heat that cuts through the richness of the cheese and cream.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container in the refrigerator for up to 3 days.
Freezer
The cooked pork can be frozen in an airtight container for up to 2 months; thaw in the refrigerator before reheating.
Reheat
Gently reheat the pork and sauce in a saucepan over low heat, adding a splash of cream or water if the sauce becomes too thick.

Store any leftover pork and sauce in an airtight container in the refrigerator for up to 3 days. Ensure the meat is completely cooled within two hours of cooking before placing it into the fridge to maintain safety and quality. When storing, keep the meat submerged in as much of the sauce as possible to prevent it from drying out, which also helps to keep the flavor vibrant for the next meal.

You can prepare the roast by stuffing it with bacon and cheese up to 24 hours in advance. Keep the prepared roast wrapped tightly in plastic wrap in the refrigerator until you are ready to cook. However, do not add the onions, herbs, or cream until right before you put the roast into the slow cooker, as this will help keep the ingredients fresh and prevent the onions from softening too early.

Serving ideas

This dish pairs beautifully with simple side dishes that can soak up the creamy sauce. Consider serving the sliced pork roast alongside roasted root vegetables, steamed green beans, or a portion of buttery mashed potatoes.

The richness of the cream sauce complements the earthiness of vegetables, creating a balanced and satisfying meal that feels special enough for guests but is simple enough for a family dinner.

For a more complete plate, you might add a crisp green salad with a sharp vinaigrette to provide a refreshing contrast to the creamy pork. The acidity of the salad dressing will cleanse the palate between bites of the rich, cheese-filled roast.

Presentation is key, so arrange the slices of pork on a warm platter, pouring the sauce over the meat just before bringing it to the table to ensure everything stays warm and inviting.

Frequently asked questions

Can this be made with a different type of meat?
While this recipe is specifically designed for a pork roast, you could use a thick beef roast as an alternative. However, be aware that beef requires different cooking times and may result in a different flavor profile, so adjust the cooking time to ensure the meat reaches a safe internal temperature.
Why is it important to rest the meat?
Resting the meat is essential because it allows the internal juices to redistribute throughout the roast. If you slice the pork immediately after removing it from the slow cooker, the juices will run out onto the cutting board, leaving the meat dry. Resting for at least 3 minutes ensures that every bite remains succulent and flavorful.
Can the cream sauce be made dairy-free?
To make this dish dairy-free, you would need to substitute the heavy cream with a high-quality, unsweetened coconut cream or a dairy-free cooking alternative. Note that this will significantly change the flavor profile of the sauce. Additionally, ensure that your cheese substitute is also dairy-free to keep the entire dish compliant with your dietary requirements.

Ingredients

  • 3 lb pork roast, trimmed
  • 6 slices bacon, cooked
  • 6 slices cheese (such as Emmental or Swiss)
  • 2 cups onions, thinly sliced
  • 1 tbsp herbes de Provence
  • 1 cup heavy cream

Instructions

  1. Using a sharp knife, make deep vertical slices along the pork roast without cutting all the way through to the bottom. Insert one slice of bacon and one slice of cheese into each cut to create the classic Orloff filling.
  2. Place the prepared pork roast into the bottom of the slow cooker insert. Scatter the thinly sliced onions evenly over the top of the roast. Sprinkle the herbes de Provence over the onions and pork, then pour the heavy cream over the entire assembly to coat the meat.
  3. Cover the slow cooker and set to low heat for 6 hours. Once finished, check that the pork has reached an internal temperature of 145°F (63°C). Remove the roast to a cutting board, let it rest for at least 3 minutes, then slice and serve with the creamy pan sauce.
