Tips for success
To enhance the flavor of the broth, you can lightly toast the dried chiles before blending them into the sauce. This releases their natural oils and deepens the smoky profile. If you prefer a spicier posole, retain some of the chile seeds when blending the sauce, though be aware this will significantly increase the heat level of the final dish.
When serving, encourage guests to squeeze the fresh lime juice directly over their bowls just before eating.
This acidity is not just for flavor; it acts as a necessary contrast to the heavy, savory notes of the pork and broth, brightening the entire dish and making each bite more enjoyable. A small sprinkle of extra oregano over the top can also boost the aromatic quality of the serving.
Variations
- Chicken Posole: Replace the pork shoulder with three pounds of bone-in, skin-on chicken thighs. The cooking time remains the same, but ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
- Vegetarian Posole: Substitute the pork with three cans of black beans and two additional cans of hominy. Use vegetable broth instead of meat broth and increase the garlic and oregano for added depth.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Cool leftovers for no more than 2 hours before refrigerating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over medium-low heat until steaming hot, or in the slow cooker on high until thoroughly heated.
Store any leftovers in an airtight container in the refrigerator for up to three days. Cool the soup at room temperature for no more than 2 hours before placing it into the refrigerator to ensure food safety.
This dish is excellent for making ahead, as the flavors improve with time. You can prepare the entire soup a day in advance, allow it to cool, and then refrigerate it.
Reheat the posole slowly on the stovetop or in the slow cooker until it is hot throughout. Add the fresh toppings, such as the avocado and cilantro, only after reheating to ensure they remain fresh and vibrant.
Serving ideas
Posole Rojo is a substantial meal on its own, but it is traditionally served with a variety of toppings that add texture and freshness.
Set up a topping bar with bowls of diced avocado, shredded cabbage, radish rounds, Mexican crema, fresh cilantro, and lime wedges. This allows everyone to customize their bowl to their preference, balancing the rich pork broth with crunchy and acidic elements.
The meal is best served in deep, heat-retaining bowls, ideally ceramic or clay, which help keep the soup warm while eating. Because the posole is quite filling, it pairs well with simple side dishes like warm corn tortillas or a light green salad if additional sides are desired.
Ensure everyone has a spoon and a fork, as the pieces of pork and hominy are substantial and best enjoyed with a hearty appetite.
