Tips for success

For a deeper flavor, you can sear the pork strips in a hot skillet with a small amount of oil before adding them to the slow cooker. This caramelization adds a layer of complexity to the sauce. However, this step is entirely optional and the recipe will still be delicious without it if you prefer a completely hands-off preparation method that requires no extra cleanup.

If you find the sauce is too thin at the end of the cooking time, you can remove the lid for the final 20 minutes and set the slow cooker to high. This helps to reduce the liquid slightly and concentrates the flavors.

Alternatively, you can stir in a small amount of cornstarch mixed with cold water to achieve a thicker, more velvety consistency that coats the pork and vegetables beautifully.

Variations

  • Spicy Pepper Steak: Add 1 tablespoon of chili garlic sauce or a teaspoon of red pepper flakes when pouring in the soy sauce mixture for an added kick of heat.
  • Ginger-Infused Pork: Incorporate 1 tablespoon of freshly grated ginger into the sauce mixture to provide a bright, zesty contrast to the savory notes of the soy sauce.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat in a saucepan over medium-low heat until steaming hot, or microwave in 1-minute intervals until thoroughly heated through.

Store any leftovers in an airtight container. Allow the food to cool at room temperature for no more than two hours before placing the container into the refrigerator.

The pork and vegetables will keep well in the refrigerator for up to three days. When storing, keep the liquid in the container with the meat to prevent it from drying out during subsequent reheating, ensuring the flavor remains consistent.

You can prepare all the ingredients, including slicing the vegetables and meat, up to 24 hours in advance and store them in the refrigerator. When you are ready to cook, simply assemble everything in the slow cooker and start the process.

This makes the recipe an excellent candidate for meal prepping, allowing you to have a flavorful dinner ready to go with minimal effort during a hectic work week.

Serving ideas

Serve this pork pepper steak over a bed of steamed jasmine or basmati rice to soak up the savory sauce. The neutral flavor of the rice provides a perfect canvas for the bold, salty, and umami notes of the braised meat and vegetables. Garnish with a sprinkle of sliced green onions or toasted sesame seeds if you desire a bit of added texture and freshness to finish the dish.

Alternatively, serve the pork over thin rice noodles or egg noodles for a different texture. The sauce clings well to noodles, making every mouthful flavorful.

Pair this dish with a side of steamed broccoli or stir-fried bok choy to add a crisp, fresh element that contrasts with the tender, slow-cooked pork. This creates a balanced and satisfying meal that is suitable for any occasion, from simple family dinners to casual gatherings with friends.

Frequently asked questions

Can this be made with chicken instead of pork?
Yes, boneless chicken thighs can be substituted for the pork loin. Adjust the cooking time slightly, as chicken thighs will typically cook faster than pork loin strips.
Is it necessary to brown the meat before slow cooking?
Browning is not strictly necessary for this recipe to be successful. While searing can add extra depth of flavor, the slow cooker method is designed to be simple and efficient.
How can the sauce be made thicker?
To thicken the sauce, whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.

Ingredients

  • 1 1/2 lb pork loin, cut into strips
  • 2 large bell peppers, sliced
  • 1 large onion, sliced
  • 1 tsp garlic powder
  • 1/2 cup soy sauce
  • 1 cup beef broth

Instructions

  1. Place the pork loin strips into the bottom of the slow cooker. Scatter the sliced bell peppers and onions evenly over the top of the pork. Ensure the meat is arranged in a single layer if possible to allow for even cooking throughout the process.
  2. Sprinkle the garlic powder uniformly over the vegetables and meat. In a measuring cup, combine the soy sauce and beef broth, then pour the mixture over the contents of the slow cooker. Cover the slow cooker with the lid to begin the braising process.
  3. Cook on low for 4 hours until the pork reaches an internal temperature of 145°F (63°C). Once finished, turn off the slow cooker and allow the meat to rest for at least 3 minutes before serving. Serve the tender pork and vegetables warm directly from the stoneware crock.
