Tips for success

For the best texture, don't rush the cooking time. Low and slow is the key to tender pork. If you're short on time, you can cook on high for 4-5 hours, but the meat won't be quite as succulent.

Also, choose a good-quality sharp cheddar—it makes a difference in flavor. Finally, let the pork rest in the sauce for a few minutes after shredding to absorb the flavors.

To make this dish even easier, use pre-cut pork stew meat or ask your butcher to cut the pork shoulder into chunks.

You can also make this recipe ahead and refrigerate it; the flavors only get better. Reheat gently on the stove or in the microwave, adding a splash of water or broth if needed to loosen the sauce.

Variations

  • Spicy Chipotle: Add 2-3 chipotle peppers in adobo sauce, minced, along with the tomatoes. This adds a smoky, deep heat that complements the creamy cheese. Reduce the pickled jalapeños if you prefer less heat.
  • Green Chile: Use a can of diced green chiles instead of fire-roasted tomatoes with green chiles. Add a can of tomatillos or green salsa for extra tang. This variation is brighter and less tomato-forward.
  • Beef Barbacoa: Substitute the pork shoulder with beef chuck roast, cut into chunks. Increase the cooking time to 10-12 hours for fork-tender beef. The creamy sauce works equally well with beef, creating a rich barbacoa-style dish.
  • Veggie Version: Replace the pork with 3 cups of cauliflower florets and 1 can of chickpeas. Cook on low for 4-5 hours, until the cauliflower is tender. The creamy sauce coats the vegetables beautifully, making a hearty vegetarian meal.

Store leftover carnitas in an airtight container in the refrigerator for up to 4 days. The sauce may thicken when cold; add a splash of water or broth when reheating to restore a creamy consistency. Reheat in a saucepan over medium heat, stirring occasionally, until warmed through.

This dish is perfect for meal prep. Cook the carnitas as directed, then cool completely and refrigerate in portions. It can be made up to 3 days ahead. Reheat gently on the stovetop or in the microwave. The flavors meld and deepen overnight, making leftovers even more delicious.

Serving ideas

Serve the carnitas over cilantro-lime rice for a complete meal. The creamy, spicy pork pairs beautifully with the fresh, citrusy rice.

You can also serve it in warm corn or flour tortillas with your favorite taco toppings like shredded cabbage, diced onions, and fresh cilantro. A squeeze of lime brightens the dish and adds a pop of freshness.

For a low-carb option, serve the carnitas in lettuce cups or over a bed of greens. The rich sauce is also delicious spooned over roasted vegetables or mashed potatoes.

Leftovers can be used in quesadillas, nachos, or as a filling for stuffed peppers. This versatile dish is as good the next day as it is the first.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, but the cooking time will be shorter. Sear the pork on the sauté function, then add the remaining ingredients. Cook on high pressure for 60 minutes, then natural release. The sauce may be thinner; use the sauté function to reduce it for a few minutes.
How can the sauce be thickened?
If the sauce is too thin after cooking, remove the lid and cook on high for 15-20 minutes to allow some liquid to evaporate. Alternatively, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the sauce, cooking for a few minutes until thickened.
Can this recipe be doubled?
Yes, this recipe can be doubled in a larger slow cooker (at least 8-quart). Keep the cooking time the same, but ensure the slow cooker is not more than three-quarters full. Stir the ingredients after the first 4 hours to ensure even cooking.
What if the cream cheese doesn't melt completely?
If the cream cheese is not fully melted by the end of cooking, stir the mixture well. The heat from the pork and sauce should melt it. If not, turn the slow cooker to high and stir occasionally for 10-15 minutes until smooth.
Can this be served as a dip?
Absolutely! Shred the pork finely and serve the mixture warm with tortilla chips, crackers, or sliced baguette. The creamy sauce makes it a perfect party dip. Keep it warm in the slow cooker on the warm setting.

Slow-Cooker Pork Carnitas with Creamy Cheddar Jalapeño Sauce

Prep 10 minCook 8 hTotal 8 h 10 minServes 8
Slow cooker filled with creamy pork carnitas, topped with melted cheddar and jalapeños.

Ingredients

  • 3 lb pork shoulder, cut into 1-inch chunks
  • 1 can (14.5 oz) fire-roasted diced tomatoes with green chiles
  • 1/2 cup sliced pickled jalapeños
  • 8 oz block cream cheese, softened
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Place the pork shoulder chunks in the bottom of a 6-quart slow cooker. Pour the fire-roasted diced tomatoes with green chiles and the sliced pickled jalapeños over the meat, spreading them evenly. Place the block of cream cheese in the center of the mixture, then sprinkle the shredded sharp cheddar over everything.
  2. Cover the slow cooker and set it to low. Cook for 8 to 10 hours, or until the pork is fork-tender and easily shreds. The cream cheese and cheddar will melt into a creamy sauce as the pork cooks. Let it rest for 3 minutes before slicing.
  3. Once the pork is tender, use two forks to shred the meat directly in the slow cooker. Stir the shredded pork into the creamy tomato-jalapeño sauce until well combined. Let it sit for 5 minutes to absorb the sauce.
  4. Taste the carnitas and adjust seasoning if needed. The pickled jalapeños and tomatoes add salt and heat, but you can add a pinch of salt or a dash of hot sauce if you prefer. Keep warm until ready to serve.
  5. Serve the carnitas over cilantro-lime rice, in warm tortillas, or on its own. Top with fresh cilantro, diced onions, or a squeeze of lime if desired (not included in the video).
