Tips for success
For the best results, use a slow cooker that holds at least 6 quarts to ensure the ribs fit in a single layer. If they overlap, they will still cook, but they may not glaze as evenly.
If you have time, you can sear the ribs in a hot skillet before adding them to the slow cooker—this adds a deeper flavor, but it's not necessary. The recipe works exactly as written, so feel free to skip the searing for a true dump-and-go experience.
When serving, spoon extra glaze from the slow cooker over the ribs. If the sauce is too thin, transfer it to a small saucepan and simmer over medium heat until it thickens to a syrupy consistency.
For a brighter finish, add a squeeze of lemon juice or a pinch of sumac just before serving. The pomegranate arils are essential for texture and freshness—don't skip them, as they provide a burst of juice that cuts through the richness.
Variations
- Spicy Pomegranate Ribs: Add 1-2 teaspoons of Aleppo pepper or red pepper flakes to the glaze for a gentle heat. The spice balances the tartness of the pomegranate and adds a warm, complex kick. Serve with a dollop of yogurt to cool the palate.
- Orange and Sumac Glaze: Replace the honey with 1/4 cup orange juice and add 1 tablespoon orange zest to the glaze. The citrus brightens the flavor and pairs beautifully with the sumac. Omit the pomegranate arils and garnish with orange supremes instead.
- Boneless Chuck Roast Variation: Use a 4-pound boneless beef chuck roast instead of short ribs. Cook on LOW for 8 hours, then shred the meat and toss with the reduced glaze. Serve in warm tortillas with pickled onions and fresh cilantro.
- Smoky Pomegranate Ribs: Add 1 teaspoon smoked paprika to the glaze for a subtle smokiness. The smoky flavor complements the sweet-tart pomegranate and adds depth. You can also use smoked sumac if available.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The glaze will thicken; add a splash of water or broth when reheating.
- Freezer
- Freeze the cooked short ribs in a freezer-safe container with some of the glaze for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently in a covered pot over low heat, adding a splash of broth or water to loosen the sauce.
Store leftover short ribs in an airtight container in the refrigerator for up to 4 days. The glaze will thicken further as it cools; reheat gently in the microwave or on the stovetop with a splash of water or broth to loosen the sauce. The ribs can also be kept in the refrigerator for up to 4 days, and the flavor actually improves after a day as the spices meld.
This recipe is perfect for making ahead. Prepare the glaze and coat the ribs the night before, then store the covered slow cooker insert in the refrigerator. In the morning, place it in the slow cooker base and cook on LOW for 8 hours.
You can also fully cook the ribs, then cool and refrigerate them; reheat gently before serving. The glaze can be made up to a week ahead and stored in the refrigerator.
Serving ideas
Serve the short ribs over a bed of herb couscous, letting the glaze soak into the grains. Scatter with pomegranate arils and fresh mint leaves just before serving.
The arils add a burst of tart-sweet juice, while the mint brings a cool, fresh contrast. For a more substantial meal, add a side of roasted vegetables or a simple green salad with a lemon-tahini dressing.
This dish pairs well with a full-bodied red wine, such as a Syrah or a Zinfandel, which can stand up to the bold flavors. For a non-alcoholic option, try a sparkling pomegranate spritzer with fresh mint. The leftovers are excellent shredded and stuffed into warm pita with pickled onions and yogurt, or served over rice with extra glaze.

Pomegranate Molasses Za'atar Short Ribs Slow Cooker

Ingredients
- 4 lb bone-in beef short ribs
- 1/2 cup pomegranate molasses
- 1/4 cup honey
- 2 tbsp za'atar
- 1 tbsp sumac
- 10 cloves garlic, peeled
- herb couscous, for serving
- pomegranate arils, for serving
- fresh mint leaves, for serving
Instructions
- Place the 4 pounds of bone-in beef short ribs in the slow cooker. In a small bowl, stir together the pomegranate molasses, honey, za'atar, and sumac. Pour this glaze over the ribs, turning them with tongs to coat each piece evenly. Tuck the garlic cloves among the ribs.
- Cover the slow cooker and cook on LOW for 8 hours, until the meat is fork-tender and easily pulls away from the bone. The glaze will reduce and become a sticky, dark lacquer around the ribs. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker. Using tongs, carefully transfer the short ribs to a serving platter. Let them rest for at least 3 minutes before serving. Spoon some of the reduced glaze from the slow cooker over the ribs.
- Serve the short ribs over a bed of herb couscous. Scatter with pomegranate arils and fresh mint leaves just before serving.
