Tips for success

For a deeper flavor, you can sauté the onions and peppers in a separate pan before adding them to the slow cooker, though this is optional.

Adding a small amount of acidity, like a splash of vinegar or a squeeze of fresh lime juice just before serving, can brighten the flavors and cut through the richness of the tomato sauce. If the sauce is too thin, you can stir in a small amount of cornstarch slurry during the last few minutes of cooking.

When serving, consider removing the chicken thighs to a platter to make it easier to spoon the potatoes and sauce into individual bowls. This also allows you to skim off any excess fat that may have risen to the surface during the cooking process.

Freshly chopped parsley or cilantro makes a simple, vibrant garnish that adds a pop of color and freshness to the finished dish, elevating the presentation without the need for complex techniques.

Variations

  • Spicy Pollo Guisado: Add a teaspoon of red pepper flakes or a diced jalapeño pepper to the slow cooker along with the onions and bell peppers for a gentle, warming heat that complements the tomato sauce.
  • Mediterranean Style: Incorporate a handful of pitted green olives and a tablespoon of capers during the last hour of cooking to add a briny, savory depth that pairs beautifully with the chicken.

Storage and make-ahead

Fridge
Keep in the refrigerator for up to 3 days in a sealed container.
Freezer
Freeze for up to 2 months in a freezer-safe container; thaw in the refrigerator overnight before reheating.
Reheat
Reheat in a saucepan over medium-low heat until steaming hot, adding a splash of water or broth if the sauce has thickened too much during storage.

Store any leftovers in an airtight container once they have cooled to room temperature, which should take no longer than two hours. Placing the container in the refrigerator will keep the dish safe for up to three days. When storing, try to keep the meat and vegetables in the sauce to prevent them from drying out. Avoid storing the dish in the original slow cooker insert, as this may take too long to cool down in the refrigerator.

You can prepare the ingredients and layer them in the slow cooker insert the night before, then cover it and keep it in the refrigerator. When you are ready to cook, simply remove the insert from the refrigerator, let it sit for about 20 minutes to take the chill off, and then proceed with the cooking instructions. This makes it extremely easy to start your dinner right when you walk through the door after a long day.

Serving ideas

Serve this pollo guisado in deep, warm bowls to capture all the delicious sauce. It is traditionally accompanied by a side of white rice or crusty bread, which is perfect for soaking up the flavorful tomato broth.

The dish is hearty enough to stand alone, but a simple side salad with a light vinaigrette provides a nice contrast to the richness of the braised meat and potatoes. Ensure the portions are balanced, with plenty of sauce for each serving.

If you are serving a crowd, this dish is excellent when plated family-style. Place the chicken and vegetables on a large serving platter and pour the thickened sauce over everything.

Keep a ladle nearby so guests can serve themselves exactly how much sauce they prefer. The warm, comforting nature of the meal makes it a great choice for casual gatherings where you want to spend time with your guests rather than being stuck in the kitchen.

Frequently asked questions

Can this be made with chicken breasts instead of thighs?
Chicken breasts can be used, but they cook much faster than thighs and are prone to drying out during long slow cooker cycles. If using breasts, reduce the cooking time to ensure they remain moist and tender, or check the internal temperature frequently.
Why is the sauce watery at the end of cooking?
The slow cooker traps steam, which prevents evaporation. If the sauce is too thin, you can remove the lid for the final 30 minutes of cooking on high to allow some moisture to escape and the sauce to thicken naturally.
Is it necessary to peel the potatoes?
Peeling is optional. If you prefer a more rustic texture, you can leave the skins on, provided they are thoroughly scrubbed. The skins also add a slight amount of texture and fiber to the final dish.
