Before you start

Before beginning the cooking process, ensure that your slow cooker is clean and placed on a flat, heat-resistant surface away from any water sources. Prepare the vegetables by washing the poblano peppers and red onion thoroughly. Remove the stems and seeds from the poblano peppers, then slice them into thin strips.

Peel the red onion and slice it into similar strips to ensure even cooking. Take the beef chuck roast out of the refrigerator about 20 minutes before you start to take the chill off, which helps with more consistent cooking.

Have your seasoning packet and beef broth measured and ready to go so that the assembly process is quick and efficient.

Ingredients at a glance (5)
  • 3 lb beef chuck roast
  • 3 poblano peppers, sliced
  • 1 red onion, sliced
  • 1 packet seasoning packet
  • 1 cup beef broth

Instructions

Assembly of ingredients

  1. Prepare the slow cooker
Place the beef chuck roast into the bottom of the slow cooker insert. Ensure the meat is lying flat to allow for even cooking throughout the process.
Look for the meat is centered in the base
Tip ensure the roast is not too large for your specific slow cooker size

At this stage, the beef is placed at the base of the slow cooker, with the sliced poblano peppers and red onions distributed evenly over the top. The seasoning is sprinkled across the entire surface, and the beef broth is poured in. Everything should look neatly layered and ready for the long, slow heat to begin its work.

The slow cooking process

  1. Add aromatics and seasonings
Scatter the sliced poblano peppers and red onions evenly over the top of the beef. Sprinkle the seasoning packet across the entire surface of the meat and vegetables.
Look for the ingredients are layered evenly
Tip spreading the seasoning ensures every part of the beef gets flavor

During the long cooking phase, the slow cooker maintains a steady, low heat. The beef will gradually release its juices, which combine with the broth and the flavors from the vegetables and seasoning. The kitchen should begin to smell savory and aromatic as the meat slowly breaks down and becomes tender.

Shredding and finishing

  1. Pour and cook
Pour the beef broth into the slow cooker. Cover with the lid and cook on low for 8 hours. Once finished, check that the internal temperature of the beef reaches 145°F (63°C). Let the beef rest for at least 5 minutes before shredding with two forks.
Look for the beef is fork-tender and pulls apart easily
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip do not lift the lid during the first 6 hours to maintain steady heat

Once the cooking time is complete, the beef should be extremely tender and practically falling apart. After the required resting period, use two forks to pull the meat into smaller, manageable shreds. The vegetables will be soft and integrated into the shredded beef, creating a cohesive and flavorful final dish ready for serving.

Common mistakes

A common mistake is lifting the lid of the slow cooker too frequently during the cooking process. Every time the lid is removed, heat escapes and the internal temperature drops, which can add significant time to the cooking cycle.

Another error is failing to trim excessive fat from the roast before cooking; while some fat is necessary for flavor, large, thick caps of fat can make the final dish overly greasy. Finally, do not rush the resting phase after the meat reaches the target temperature, as this is essential for the texture of the shredded beef.

How to tell it’s done

The beef is perfectly done when it is fork-tender and pulls apart easily with minimal pressure. Use a food thermometer to check the thickest part of the roast; it must reach an internal temperature of at least 145°F (63°C).

Once this temperature is verified, allow the meat to rest for at least 5 minutes before you begin the shredding process. Resting is crucial as it allows the internal juices to redistribute, ensuring that every strand of the shredded beef remains moist and flavorful rather than drying out during the serving process.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
